  1. If your dates aren’t soft, soak them in warm water for 10 minutes, then drain well and remove pits.
  2. Add the biscoff cookies to a food processor and pulse a few times to break them down to crumbs. I used a blender to make the energy balls here but I do not recommend using one as it was very hard to mix and can burn out a blender motor.
  3. Add dates, oats, carrots, almond butter, walnuts, coconut, flaxseed, spices, salt, vanilla, and protein powder to the food processor. Pulse until the mixture comes together and is sticky.
  4. Use a tablespoon to scoop mixture and roll between your palms to form balls. If mixture is too sticky, refrigerate for 15-20 minutes first or wet your hands to mix.
  5. Roll each ball in additional shredded coconut.
  6. For the icing, mix cream cheese, Biscoff spread, vanilla, maple syrup, and Greek yogurt until smooth. Drizzle over energy balls or serve as a dip.
