Pesto Flatbread Pizza
Aren’t flatbreads pretty much the best thing out there? They take no time to make, you can put a whole variety of things on top and it will always be delicious, and they’re super filling and light at the same time.
There are so many different ways to prepare them! One of my favourite ones is using coconut yoghurt and vegetable oil, but I often make them with regular yoghurt and melted butter. And if I don’t have yoghurt at all, I’ll just add water instead. All delicious!
Similarly, you can either make them on a non-stick pan or in the oven, depending on how much time you have and how crispy you want it to be. Recently I’ve started putting them in a preheated oven for about 10 minutes before placing the toppings on top – it ends up being super crispy and light.

Ingredients
For the dough
- 12g vegetable oil or melted butter
- 45g coconut or white yoghurt
- 75g all purpose flour
- salt to taste
For the toppings
- 3tbsp green pesto
- 30g feta cheese
- 30g olives
- handful of cherry tomatoes
Instructions
For the dough
- Place all ingredients together in a bowl and knead for a few minutes
- Roll out to pizza shape
- Cook on a non-stick pan for 5-10 minutes or place in an oven preheated to 200c (390f) for 10 minutes
- Spread toppings and serve

Is there an American translation for the ingredients?
Okay, I saw the picture and immediate started to salivate! I have basil plants going gangbusters so by the end of the summer, I usually freeze a ton of pesto to have fresh pesto all winter (SOOOOOO delicious - summer pesto in January!!!). I threw a naan on the grill and the chew of the naan with the fresh pesto and tomatoes? You don't even miss the melted mozzarella - it's just so fresh, summery, and you can eat an entire half a pizza without feeling like you overdid it, it's so light!!! Thank you so much for posting this fast, easy, and de-lish-us recipe idea!!! Even my daughter, who is dairy-free, loved it, minus the feta! Now THAT is an accomplishment! lol Cheers!
