These air fryer baby carrots are made with a delicious honey glaze and are incredibly easy to make. A healthy side dish that is prepped quickly and on your table in less than 30 minutes. This is an inexpensive side dish that is perfect for a weeknight meal or for your next holiday gathering.

Ingredients

  • ▢ 1/4 cup honey (warmed if your honey has crystallized)
  • ▢ 3 tbsp. extra-virgin olive oil
  • ▢ 2 cloves minced garlic
  • ▢ 1/2 tsp. salt
  • ▢ 1/4 tsp. pepper
  • ▢ 2 lbs. baby carrots (not petite baby carrots)
  • ▢ 1/4 cup chopped fresh parsley (optional)
Instructions

Preheat air fryer to 400 degrees F.
In a small bowl, whisk together the honey, extra-virgin olive oil, garlic, salt, and pepper.
Add baby carrots to a large mixing bowl and pour honey glaze over carrots. Mix to coat all the carrots.
Add carrots in a single layer to your air fryer basket (if a few overlap that is okay as they will shrink while cooking and create more space).
Air fry for 15-20 minutes, shaking air fryer basket halfway through. Carrots are done when they can easily be pierced with a fork. You can continue cooking until they are browned and roasted to your liking.
Remove from air fryer basked and sprinkle with chopped fresh parsley (optional).

Tips
  • Exact cooking time will vary depending on your air fryer and size of your carrots.
  • If you have leftover glaze in your mixing bowl, you can add this to the carrots at the halfway point when you shake the air fryer basket.
  • If desired, sprinkle finished carrots with dried herbs such as dill or thyme.
  • For a shiny glaze on the finished carrots, mix some additional honey and olive oil together and brush onto carrots (if sprinkling with herbs, brush on the honey mixture first).
