Easy Greek Veggie “Pizza”

We are currently in the middle of a multi-day heat wave where I live, and the last thing I want to do is turn on the oven and cook dinner. In situations like this, I often serve up sandwich type dinners, “cold plate”, or hardy salads for dinner. On this particular evening I wanted to change things up and serve something completely different. I raided my fridge and pantry and gathered a few ingredients that I thought would work well together.

Read below to find out what I came up with, and see that you can serve up a delicious hardy meal without turning on your oven!

To make this simple Greek veggie pizza you will need some kind of pita bread, pizza crust or flatbread.

I had this large flatbread on hand so I used that as my “pizza” base.

Top the bread with a generous layer of premade tzatziki sauce. If you have never heard of tzatziki, it’s a light yogurt based spread flavored with garlic and cucumber.

Top the “pizza” with some Greek inspired veggies. I used cucumber, red onions, tomatoes and Kalamata olives.

This pizza is looking delicious already! The vibrant colors of the veggies are so appealing and look so refreshing.

To take this pizza over the top, I sprinkled on some crumbled feta and seasoned it with salt, pepper and a little dried oregano.

I ended up serving this alongside a precooked rotisserie chicken and some fruit. It was the perfect dinner to enjoy on a hot summer evening.

Ingredients

  • 1 large flatbread (you can also use Greek pitas)
  • 1 container tzatziki (227g)
  • 1 baby cucumber thinly sliced
  • 3/4 cups sliced grape tomatoes
  • 1/2 small red onion
  • sliced Kalamata olives
  • 1/4 cups crumbled feta
  • salt and pepper to taste
  • dried oregano for garnish
Instructions

Wash and thinly slice all of the vegetables.
Top the flatbread with a generous layer of premade tzatziki sauce
Arrange the veggies over the pizza
Evenly sprinkle crumbled feta cheese over the entire pizza.
Lightly season with salt and pepper and a pinch of dried oregano.
Serve immediately and enjoy!
