Avocado Flatbread

A few of my fellow Instagram foodies and I are doing this monthly collab in which we choose a different ingredient each month and have to create a recipe using that ingredient. When one of the girls suggested using avocado, I was a bit worried, to be honest. I thought to myself "sure, I can put an avocado in a salad, but you can't really call that a recipe, can you?". And I've never tried baking with avocado before, because I find warm avocado quite repulsive. Boy, was I wrong!
The combination of avocado with goat cheese is absolutely wonderful! The flatbread comes together so easily, you can have a delicious dinner ready in just a few minutes!

I couldn't decide which option I preferred, though...
One of the flatbreads is made with feta cheese and roast beef. The other is made with goat cheese and pancetta. Both feature a delicious guacamole base and are topped with fresh coriander leaves and cherry tomatoes.
Which one would you choose? Maybe both?Bear in mind that replacing butter and liquid in a recipe with an avocado does make the dough more wet than your usual flatbread, as you can see on the picture here.

Ingredients
Flatbreads
- 1 Hass avocado
- Half a lemon, juiced
- 1 clove garlic
- Bunch of fresh coriander leaves
- Pinch of salt
- 200g (1 1/2 cup) all purpose flour
Guacamole base
- 1 Hass avocado
- Half a lemon, juiced
- Bunch of coriander leaves
- Seasoning - salt, chilli flakes, pepper to taste
Toppings
- 30g feta cheese / goat cheese
- 50g pancetta / roast beef
- Fresh coriander leaves
- Cherry tomatoes
Instructions
Flatbreads
- Mix all the flatbread ingredients apart from flour together until smooth
- Add flour and knead for a few minutes
- Cover in a bit of olive oil and let rest under cover for about 20 minutes, it'll become very elastic
- Divide the dough into 2, roll each part out to flatbread shape
- Cook for about 5 minutes on either side on a large pan with olive oil on medium heat
Assemble
- Blend the guacamole ingredients together, season to taste, and spread on top of the cooked flatbread
- Top with your cheese and meat of choice, or maybe something else entirely!
- Enjoy!
