If you’re looking for a super quick, nourishing, fully plant-based breakfast then this is it! It surprises me that even though I continue to work from home in the ‘Coronaverse’, breakfast time can still be a bit of a rush. Toasting a slice of bread would take longer than whipping up this beautiful breakfast smoothie. Although a slice of toast with nut butter is a perfect accompaniment.
This recipe also gets bonus points for combating food-waste. If you’ve got some bananas that are looking a little spotty, pop them in the freezer to use for this recipe. My freezer is full of fruit and veggies that I have salvaged from an unnecessary fate towards the kitchen compost bin - not only good for the planet, but good for your purse too!

Ingredients
- 1 frozen banana
- ½ cup frozen blueberries
- 2 tsp chia seeds
- ¾ cup oat milk
Instructions
- Pop all the ingredients in the blender, hit the button and watch the beautiful purple smoothie whirl together.
- Pour into a glass and enjoy!

Sounds yummy !!
I think I will add some zucchini as well for the healthy greens.
I’m guessing that any kind of milk would
work here??
