  • 2 cups pumpkin, cut into 1-inch cubes
  • 2 cups potatoes, cut into 1-inch cubes
  • 2 garlic cloves, minced or thinly sliced
  • 1 tablespoon fresh rosemary, chopped
  • 2 tablespoons olive oil
  • Salt, to taste
Instructions

Wash and peel the potatoes and pumpkin. Cut both into 1-inch cubes. Toss the cubes in a large bowl with minced garlic, rosemary, olive oil, and salt until evenly coated.
Preheat the air fryer to 360°F (180°C). Line the basket with parchment paper and spread the seasoned vegetables in a single layer. Cook for 10 minutes, shaking the basket halfway through.
Increase the temperature to 375°F (190°C) and cook for another 10 minutes, or until the edges are golden and crisp and the insides are tender. Serve hot and enjoy!
