Loaded Mashed Potato Casserole

What my family LOVES mashed potatoes, I am not a huge fan. I tend to think they are bland and lack a lot of flavor. So I decided to jazz them up a bit by adding ingredients you would normally find on a loaded baked potato such as sour cream, bacon and cheddar cheese. The outcome as amazing; as my husband would say, "I knocked it out of the park" with this one!
Just beware, this is NOT a diet friendly recipe, but the calories are worth every bite!
Mixing in 1 cup of sour cream, 1 cup whole milk, 2 sticks (yes, 2 sticks) of butter, cheddar cheese, and crumbled bacon takes everyday mashed potatoes to a whole new level.
Top the potatoes with more cheese and bacon, and bake to create a cheesy, indulgent crust on the casserole.
This recipe makes a lot so it would be the perfect dish to take to any potluck or gathering.
The outcome is a creamy, cheesy, savory side dish that will be a hit with all of your family and friends.
Loaded Mashed Potato Casserole

Ingredients
- ½ pound bacon, cooked and crumbled
- 8 medium russet potatoes, peeled and cubed
- 2 sticks salted butter, softened and sliced into cubes.
- 1 cup sour cream
- 1 cup whole milk
- 4 cups grated cheddar cheese, plus more for topping
- Salt and pepper to taste
Instructions
- Place cubed potatoes in a large pot, cover with water, and bring to a boil over high heat. Boil until potatoes are soft and can be pierced with a fork ( about 15 minutes).
- Meanwhile, sit sour cream, butter, and milk out to come to room temperature.
- Preheat oven to 350 degrees.
- Drain potatoes, place in a large bowl, and add butter, sour cream, milk salt and pepper. Mash or blend until smooth.
- Fold in 2 cups of cheddar cheese, and bacon (leaving about 1/4 cup bacon for topping) and pour into a large casserole dish.
- Top with 2 cups of cheddar cheese, and the rest of the crumbled bacon.
- Cook for 20 minutes and serve!
Tips
- You may add sliced green onions if desired.
- This casserole can be made up to 2 days ahead of time and baked when ready to consume.
