Lemony Herb & Garlic Mashed Potatoes

I've made mashed potatoes more times than I can count, but I've never thought to add lemon. This one ingredients brought my potatoes to a whole new level. The lemon makes this typically heavy potato dish, light and fresher than ever. I served this with a saucy brisket and it went together so well. I will definitely be making this version again!
You can use any herbs you want, but I opted for parsley, scallions, and thyme. Mint would be a lovely addition too! After the photos, I mixed in all the herbs vs sitting them on top. For more yummy side dish ideas, follow my Instagram @tikofoods.
Lemony Herb & Garlic Mashed Potatoes

Ingredients
- 2.5 lbs potatoes
- 1 lemon, zested and juiced
- 1 scallion stalk
- 2 sprigs of thyme
- 1 garlic clove
- 3 tbsp olive oil
- 3 tbsp butter
- 1/4 cup cream
- 1/2 tbsp salt
- 1/4 tbsp pepper
Instructions
- Slice the top of an entire bulb of garlic, drizzle the top with olive oil, then wrap it in tin foil
- Place the garlic in an airfyer at 390F for 18-20 minutes
- While the garlic roasts, bring a large pot of salted water to a boil
- Peel potatoes and chop them into smaller pieces, then place them in the water
- Boil for approximately 10 minutes, until soft
- Strain the potatoes, returning them to the pot
- Add all of the cloves of roasted garlic, olive oil, butter, cream, and lemon juice
- Chop the herbs and add them in too
- Mash the potatoes with a masher, then whip using a hand mixer or immersion blender for a fluffier texture
- Season with salt and pepper to taste
- Garnish with lemon zest and olive oil then enjoy!
Tips
- If you don't have an air fryer, roast the garlic in the oven at 400F for 30-40 minutes
