Greek Stuffed Peppers

Ingredients
- 6 bell peppers (Red, yellow, or orange), sliced in half
- 1 tbsp. olive oil
- 1 lb lean ground turkey
- 1/2 cup dry quinoa
- 1 small red onion, diced
- 1 cup cherry tomatoes, sliced in half
- 1 tbsp. minced garlic
- 1 tbsp Italian seasoning
- 3/4 cup feta cheese
- 1/2 cup store bought tzatziki sauce
- salt and pepper to taste
- Olive oil spray
Instructions
- Preheat oven to 350 degrees
- Place pepper halves open side up in a 9x13 baking dish, spray with olive oil. Season with salt and pepper
- Cook Quinoa according to package directions
- Meanwhile, heat 1 tbsp. olive oil in a large skillet over medium high heat.
- Add ground turkey, and cook until browned and heated through (about 5-7 minutes)
- Add onions, garlic, tomatoes, Italian seasoning, salt and pepper. Cook, stirring occasionally until softened and heated through (about 5 minutes)
- Remove from heat and stir in cooked quinoa
- Spoon turkey, quinoa mixture into the pepper halves and bake for 25 minutes
- Sprinkle with feta cheese and continue baking for an additional 10 minutes
- Spoon a dollop of tzatziki sauce over each pepper and serve!
Tips
- Store in an air-tight container in the refrigerator for up to 4 days
