Ingredients
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 medium carrot, finely diced
- 1 celery stalk, finely diced
- 1 red bell pepper, chopped
- 1 lb (450g) pork mince (ground pork)
- 1 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp ground coriander
- 1/2 tsp chili flakes (optional or to taste)
- 1 can (14 oz / 400g) chopped tomatoes
- 1 can (14 oz / 400g) black beans, drained and rinsed
- 1 cup sweetcorn (frozen or canned)
- Salt and pepper, to taste
- Water or stock, as needed to loosen
To serve
- 1 ripe avocado, sliced or diced
- Natural yogurt or Greek yogurt
- Fresh coriander (optional)
- Lime wedges
Instructions
- Heat olive oil in a large pot or deep skillet over medium heat. Add the onion, carrot, and celery and cook for about 5 minutes until softened. Stir in the garlic and red pepper, and cook for another 2–3 minutes.
- Add the pork mince and cook, breaking it up with a spoon, until browned all over. Stir in the tomato paste, cumin, smoked paprika, ground coriander, and chili flakes if using. Cook for 1–2 minutes to toast the spices.
- Pour in the chopped tomatoes, black beans, and sweetcorn. Add a splash of water or stock to loosen the mixture if it’s too thick. Season with salt and pepper. Simmer uncovered for 15–20 minutes, stirring occasionally, until the sauce is rich and the vegetables are tender.
- Taste and adjust seasoning as needed. Spoon into bowls and top with avocado, a dollop of yogurt, and optional fresh coriander or a squeeze of lime.
