Typically when you hear of a creamy salad, you immediately think of the delicious and indulgent summer potato salads, egg salads and tuna salads.

This Creamy Cucumber Radish Salad is the complete opposite of that but just as delicious. The light and refreshing creamy dressing has a base of Greek yogurt and the fresh veggies and herbs make this salad substantial with out the heaviness of mayonnaise based salads.

I love making this salad regularly throughout the summer, and it’s a great way to use up the abundance of fresh cucumbers you might have at the end of summer if you have planted your own garden.

To make this salad begin by preparing the simple dressing by combining together Greek yogurt, lemon juice, garlic powder, dill, and a touch of mayonnaise.

Next wash and thinly slice the cucumber, radish and red onion.

What makes this salad extra delicious is the addition of fresh dill. I like to add a very generous amount to my salad, but you can always add less if you prefer.

Drizzle on the dressing and gently toss until everything is evenly coated.

I like to add a few green onions to the top as a garnish and a touch more flavor.

This salad is so refreshing and a staple in my home over the summer. It is also a very healthy option for when you are craving a creamy salad.

Ingredients
Dressing
  • 1/2 cup Greek yogurt
  • 1 tbsp mayo
  • 1-2 tbsp fresh lemon juice
  • 1/4 tsp garlic powder
  • 1/2 tsp dill weed
  • Salt and pepper to taste
Salad
  • 1 cucumber peeled
  • 1/2 red onion
  • 6-8 radishes
  • 1 cup fresh chopped dill
  • Green onion to garnish
Instructions
Dressing
Prepare the dressing by combining together 1/2 cup Greek yogurt, 1 tbsp mayo, 1-2 tbsp fresh lemon juice, 1/4 tsp garlic powder, 1/2 tsp dill weed and Salt and pepper to taste.
Whisk until evenly combined.
Set the dressing aside and prepare the salad base.
Salad
Wash and thinly slice the cucumber, radishes and red onion. Add them to a large bowl.
Add 1 cup of chopped fresh dill.
Drizzle over the dressing and gently toss until evenly combined.
Garnish with green onions and enjoy!
Tips
  • This salad is best served immediately after making as the cucumber will release a lot of water and make the salad runny.
