Nothing says summer bbq like a good old classic pasta salad. Pasta salads are hearty, refreshing and the perfect side to accompany any of your summer feasts! There are so many variations of pasta salads out there, and I’m always trying new combinations to switch things up.

Over the weekend I made this delicious Italian themed pasta salad that was a huge hit with everyone. It was refreshing, zesty and even a little spicy with the added pepperoni.

If you’re looking to change up your pasta salad game this summer with a little twist, look no further as this one is sure to impress!

In a large bowl add a few handfuls of washed baby spinach. I find that by adding the spinach first it’s much easier to toss the salad later.

Add the cooked and cooled tortellini over the spinach.

Top with the diced cucumber, tomatoes, salami, bocconcini, parsley and kalamata olives(optional).

Drizzle over your favorite Italian salad dressing and gently toss until everything is evenly combined. Add salt and pepper if necessary and top with Parmesan cheese before serving.

Ingredients

  • 1 350g package cheese tortellini
  • 1 cup diced cucumber
  • 4 cups loosely packed fresh baby spinach
  • 1/2 cup mini pepperoni or Italian salami
  • 1/4 cup Kalamata olives
  • 1 small red onion diced
  • 200 g container of cocktail bocconcini cheese (drained)
  • 2 tbsp fresh parsley finely chopped
  • Parmesan cheese to garnish
  • salt and pepper to taste
  • Your favorite Italian salad dressing
Instructions

Cook the tortellini according to the package directions. Drain and set aside to cool.
While the tortellini is cooling begin by preparing all of the vegetables. Wash and dice everything approximately the same size.
In a large bowl add the spinach, followed by the tortellini and the rest of the vegetables, meat and cheese.
Drizzle on your favorite Italian salad dressing and gently toss the salad until everything is evenly coated. You can add as much or as little dressing as you like according to your taste, I added approximately 1/3 of a cup.
Take a taste and season with Salt and Pepper if necessary.
Top with Parmesan cheese before serving and enjoy!
