Jar Salad - Apple Crunch Edition
Another yummy and nutritious jar salad that will last in your fridge for 3 days and be an easy grab for when hunger strikes!
Start with the dressing, this one was:
3 tablespoons olive oil
1.5 table spoons apple cider vinegar
Dijon mustard
maple syrup
garlic
salt and pepper to taste
Mix it all together and then add the apples to prevent them from browning.
Then add chickpeas.
This salad I chopped cucumbers and red onions finely.
Then I chopped some feta cheese or just get crumbled feta.
Lastly, I added romaine lettuce from a bag to avoid needing to chop it up. When you are ready to eat, flip it over and enjoy
This is such a great summer salad that will make you feel great from the inside out. Now that I need to commute I always prep a salad the night or several nights before because I hate spending money on unhealthy foods!

Ingredients
- 3 tablespoons olive oil
- 1.5 table spoons apple cider vinegar
- Dijon mustard
- maple syrup
- garlic
- salt and pepper to taste
- 1 apple
- 1 can chickpeas
- 1/2 cucumber
- red onion
- feta
- romaine
Instructions
- Start by making the dressing at the bottom of the jar
- then add the apples to marinate and prevent them from browning
- add the chickpeas and cucumbers with onions on top
- add the crumbled feta
- and finally the romaine lettuce
- store in the fridge for up to 3 days
- flip over on a plate and enjoy
