Salads in a Jar - Greek Salad Edition
If you are someone that wants to meal prep healthy food, then this is for you. I have perfected the jar salad. The problem with meal prepping salads is that they get soggy, so when making a jar salad you need to know how to layer. This will stay good to eat for 3 days!
Start with the dressing in the bottom. This salad was Greek inspired so I did 4 table spoons of olive oil, 2 table spoons of red wine vinegar and a plash of apple cider vinegar, and salt and pepper to taste.
Then you wan to add your protein because it will marinate in the dressing without getting soggy. I went with chickpeas but grilled chicken would have worked here too.
Then you add all the veggies with softer veggies like olives, tomatoes and cucumbers at the bottom and firmer veggies like onion and peppers on top.
Add you herbs after that.
Then feta, and finally the lettuce before closing the jar.
Once you are ready to eat, just flip the jar over to dress your salad!

Ingredients

- cherry tomatoes
- parsley
- cucumbers
- peppers
- red onion
- chickpeas
- romaine
- feta
Instructions
- start by making the dressing at the bottom of the jar
- add you protein - chickpeas in this case
- Then you add all the veggies with softer veggies like olives, tomatoes and cucumbers at the bottom and firmer veggies like onion and peppers on top
- then herbs
- then cheese
- finally lettuce
- store in fridge for up to 3 days
- flip over and enjoy
