Summer Salad With Watermelon, Cucumber and Mint!

Is there anything better in summer and watermelon that DOESN'T taste like water! I love a good in season watermelon. I seriously can eat a whole watermelon plain by myself in 3 days flat but sometimes I like dressing them up a bit too and making it into a summer salad.
Not only is this salad delicious but it is crazy easy. Start by dicing watermelon and cucumber.
I like to core the cucumber for an extra crunchy taste.
Place the diced fruit and veggies in a bowl.
then dice and oz of feta cheese and place in the bowl as well. This is my favorite brand from Trader Joes.
Then I like to get some fresh mint from my garden :) I love having some fresh herbs in the summer months. As a side note, herbs are the EASIEST thing to grow if you are just starting out.
No for the salad dressing, garnish the salad with apple cider vinegar, olive oil, salt and pepper.
No only is this 5 points on Weight Watchers and tasty but it also SCREAMS every summer flavor!

Ingredients
- 1 cup diced watermelon
- 1/3 of cucumber
- 1 oz. feta cheese
- 1 table spoon olive oil
- 1/2 table spoon apple cider vinegar
- 4 leaves of fresh mint
- sprinkle of salt and pepper to taste
Instructions
- dice a cup of watermelon
- peel the cucumber, core and dice
- dice the feta cheese
- chop mint
- combine everything in a bowl
- dress with olive oil, vinegar and salt and pepper
