Egg Salad With Dill Pickles

…and fresh dill… and dill pickle chips.. basically all the dill.
This Egg Salad with Dill Pickles is how you take egg salad from meh to mind blowing. Chopped hard boiled eggs mixed up with creamy mayo, chopped dill pickles, fresh dill and a little pickle juice because why not. I pile it onto sandwich bread and top it with a giant handful of dill pickle chips because you know potato chips are the best thing to ever happen to sandwiches.
This is perfect summer picnic or patio food. I mean, it’s good anytime, but in a park on a picnic blanket with a little iced tea? Perfection.
Egg salad is one of those things… It can hit the spot or it can be really bland and boring. I really wanted to come up with a more exciting egg salad and so I thought to myself… is there anything not made better by adding pickles???
No. The answer is no. But let’s not just chop up some pickles and throw them into boring egg salad.
Let’s add lots of pickles. Let’s add a little pickle juice too. And let’s add a bunch of fresh dill. And then… let’s spread the egg salad on some soft white sandwich bread (the best way to eat this imo) and top it with a big old handful of tangy, crunchy dill pickle flavoured potato chips.
This sandwich… it’s soft, creamy, briny, punchy, crunchy… It’s a dream.
Eggs (obviously) – I use large sized eggs.
Dill Pickles – whatever kind you normally use is the perfect choice. I like crunchy garlic baby dills, but any kind works. (Love this little piece on pickle types)
Fresh Dill – the addition of fresh dill really amps up the dill flavour. You can leave it out if you don’t have it. You can also sub in 1/2 tsp of dried dill weed as another option.
Pickle Juice – adding a bit of pickle brine adds more pickle flavour and also a bit of zip. You can just sub in regular vinegar if you prefer. It will be a little more sour, but I actually like it that way too.
Pickle Chips – dill pickle potato chips are an optional add but let me say that they make this AWESOME. If you’ve never put chips on a sandwich before now is the time to try. If you can’t find dill pickle chips you can use regular chips or salt and vinegar chips.
Mayo – regular old mayonnaise, but you can use greek yogurt instead.
Egg Salad with Dill Pickles Recipe Variations:
Spicy Dill Pickle Egg Salad Version – add a big pinch of cayenne pepper to the egg mixture and if you can find them use Spicy Dill Pickle potato chips.
Garlicky Version – add a minced clove of garlic into the egg mixture. This is good with some chopped green onion or red onion added in as well.
Low Carb Version – making this a sandwich is not mandatory. Scoop the egg salad into crunchy lettuce leaves for an amazing and super yummy option. Egg salad lettuce wraps!
The hardest part of this whole recipe is peeling those gosh darn hard boiled eggs. Is it ever easy?
Make your hard boiled eggs by covering the eggs with cold water in a saucepan. Bring it to a boil, turn off the heat and cover the pan. Let the eggs sit in the hot water for 10 minutes and then cool the eggs. I place the saucepan in the sink and run cold water over the eggs.
Peel the eggs, chop them up and add them to a bowl. I prefer to chop the eggs roughly and leave them with some texture rather than mashing them into a paste. I just use a sharp knife and chop them until they’re in rough pieces.
Now mix in your mayo, pickles, pickle juice, dijon and fresh dill. Season it well with S&P and fold it all until it’s well combined.
Divide the egg salad between two sandwiches. Spread the mixture evenly on the bread and then top it with a big handful of dill pickle potato chips. Sometimes I even add extra slices of dill pickles because I’m a bit pickle crazy, but you do what works for you.
If you’re making the sandwiches ahead of time I recommend bringing the chips along separately and adding them right before serving so they don’t get soggy.
Top the sandwich with another piece of bread and dig in.

Egg Salad With Dill Pickles
Recipe details
Ingredients
- 4 eggs
- 3 Tbsp mayo
- 1/3 cup dill pickles diced
- 2-3 tsp pickle juice or vinegar
- 1 tsp dijon mustard
- 1 tbsp fresh dill chopped
- S&P
- Dill pickle potato chips optional but awesome
Instructions
- Place eggs in a saucepan and cover with cold water. Bring water to a boil and then immediately remove from heat. Cover the saucepan and let the eggs sit in the hot water for 10 minutes.
- Cool the eggs immediately by running cold water over them.
- Peel, and chop the eggs and add to a bowl.
- Add in the mayo, pickles, pickle juice, dijon and dill. Season with S&P to taste.
- Spread the egg salad on sandwich bread and top with dill pickle chips, if using.
