Looking for an easy work - from - home or take to the office lunch? Look no further and try out my fool proof chicken salad recipe!
I LOVE this recipe so much and usually make it a few times a month of quick and easy lunches on the go. Here are a few tips I have to make this recipe even easier for when you’re in a rush:
- Use a rotisserie chicken rather then roasting/boiling the chicken.
- Premix the dressing and have it ready and on hand! Then when you are hungry, do a quick chop of the salad and voila, lunch is served!
- Serve with a handful of crackers or bell pepper slices.

Simple & Easy Chicken Salad
Recipe details
Ingredients
- 4 cups chopped chicken breast
- 1 cup diced celery
- 1 cup sliced red grapes
- 1/2 cup toasted nuts (almonds, walnuts or pecans work great!)
- 1/2 cup plain Greek yogurt
- 1/2 cup light mayonnaise
- 1 Tbsp prepared Dijon mustard
- 1 tsp each salt and pepper
Instructions
- In a large mixing bowl, combine chopped chicken, celery, grapes and nuts. Use a spoon to fully mix together and set aside.
- In a large glass measuring cup, whisk together plain Greek yogurt, mayonnaise, mustard and seasonings. Whisk until combined.
- Pour prepared dressing over the salad and toss to evenly coat.
- Cover and allow to sit in the fridge for at least 30 minutes (but a few hours to over night is best!). Serve in a sandwich or with crackers - YUM!
Tips
- Adding in a teaspoon or two of curry powder is DELICIOUS!
