One of my favorite go-to recipes is this chicken salad with grapes recipe.

I’ve been making it for several years because it is so easy to make and a great way to use leftover chicken.


Oftentimes, I make it to eat for brunch or lunch.


But it also makes a great sandwich to be served during afternoon tea.


There are two camps out there where chicken salad is concerned.


Some make it with grapes, while others make it celery.


I always make chicken salad with grapes instead of with celery.


It’s a little sweeter and makes the dish a little less dry.


Wait until you try this recipe for chicken salad with grapes!


Ingredients for Chicken Salad with Grapes

There are minimal ingredients for this recipe, so it's easy to shop for and prepare.


It's literally, chicken, grapes, and mayonnaise with salt and pepper to taste.


And oftentimes, I don’t even bother seasoning it with salt and pepper, because the chicken is flavored and the mayonnaise has enough salt in it so why add more.


Preparation

This recipe for chicken salad is super simple to make because there is minimal preparation.


Simply grab a few ingredients, then dice up some chicken and grapes, and you are good to go!

How to Make Chicken Salad with Grapes on Sandwiches

What I love most about this recipe is, if you don’t have leftovers, you can purchase a freshly cooked rotisserie chicken from the market, dice it up, and use it as the base.


When I’m trying to reduce my carb intake, I make this recipe as a standalone without any bread.


And yes I know the grapes still have some carbs, but I’m not sacrificing that juicy flavor.

When I’m making this dish for a special occasion, like a tea party, I grab a yummy carb, and my personal favorite is croissants.


Because I can’t get enough them.


That buttery, flaky pastry gets me every time.


So it is my go to for this chicken salad with grapes sandwich recipe.

To make the dish, simply dice up your chicken into bite size pieces.


Then slice the grapes and add them to your chicken in a mixing bowl.


Toss in about 2/3 cup of mayonnaise, then mix it well.

Chill it in the refrigerator for at least two hours so the flavors meld.

You can make this recipe ahead of time if you want as well.


If you are making it as sandwiches, slice the croissants (or bread of your choosing) just prior to serving and spoon the chicken salad with grapes onto the sandwich.


Then serve immediately.

Ingredients

  • 1 Rotisserie Chicken, diced
  • 3 cups red or green grapes
  • 2/3 cup mayonnaise
  • salt and pepper to taste optional
  • 1 package croissants
Instructions

Remove the skin, dice the chicken and add to mixing bowl.
Cut grapes in half then add to the chicken.
Add 2/3 cup of mayonnaise and mix well. If it seems dry, add a little more.
Add salt and pepper to taste (optional – I usually skip this step to avoid the additional salt).
Chill for at least 2 hours before serving on its own or making sandwiches.
To make the sandwiches, cut croissants lengthwise.
Spoon chicken salad into the sandwich.
Serve immediately.
