High Protein Hard Boiled Egg Mayonnaise

I’ve been seeing a lot of buzz on the internet about the mayonnaise made with hard boiled eggs, I try to keep my diet, high protein so I was definitely intrigued and I love eggs so today was the day I gave it a try and so glad I did, this will be on the lunch meal prep for the future for sure!

This is the finished product, can’t say that it looks any different than regular chicken salad made with mayonnaise

It’s really so easy and took only a few minutes to make, especially if your house is like ours and always have a container of hard boiled eggs on the ready in the fridge at all times. I put four hard boiled eggs in my ninja blender cup

two tablespoons of apple cider vinegar

And two tablespoons of Dijon mustard into the cup with the eggs

Then turn that blender on and let it go until the mixture is smooth and creamy, it took about 1 minute or so

It should look like this, and that’s the completed mayonnaise

I had poached up four small chicken breasts and diced them up

Scooped out all the “mayonnaise” on to the diced chicken

Mixed it all in and I was instantly hooked. It definitely has a somewhat “eggy” taste, nothing offensive at all, but if you don’t like eggs at all, this may not be for you. Of course, you can add anything you’d add to chicken salad or have it plain.

Ingredients
For the mayonnaise
  • 4 hard boiled eggs
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Dijon mustard
Instructions
To make the mayonnaise
Place all the ingredients in a blender and blend on high for approximately one minute or until the mixture is creamy and fully incorporated
Tips
  • You can use this mayonnaise on tuna, ham or egg salad too!
