A little twist on a classic favourite... Caesar Pasta Salad!

I love a good Caesar Salad and will often enjoy one for lunch, however sometimes I'm looking for something a little heartier and filling, especially if I have a busy day ahead of me.

Since I am a huge pasta lover, I decided to combine the two and try out a Caesar pasta salad. I used my homemade Caesar Salad Dressing, but if you want to take a shortcut, store bought works just as well.

If you love the flavour profiles of a good old classic Caesar Salad, I guarantee you will love this!

Begin with a bowl of freshly cooked and cooled pasta. You can toss the pasta in a little bit of oil after cooking to prevent it from sticking.

I added a can of chickpeas as a source of protein, but cooked shredded chicken is equally delicious.

Combine the ingredients for the homemade Caesar Salad Dressing and toss with the pasta until everything is evenly coated.

Finally, add in the garnishes and gently toss to combine. I chose to use cooked bacon, romaine lettuce, finely chopped red onions and croutons.

This pasta salad is so delicious and is sure to be a big hit with all the Caesar lovers in your life!

Enjoy!

If making this salad ahead of time, I recommend adding the lettuce and croutons in right before serving to keep everything crunchy and fresh.

Ingredients
For the dressing
  • 2/3 cup mayonnaise
  • Juice of 1 lemon
  • 4 tbsp Parmesan Cheese (plus more for garnish)
  • 4 cloves minced garlic
  • 2 tsp yellow mustard
  • 2 tsp Worcestershire sauce
  • A dash of Tabasco sauce
  • Ground pepper to taste
Pasta Salad
  • 1 box (340 g) rotini pasta
  • 1 can chickpeas
  • 1/4 cup finely chopped red onion
  • 5 slices cooked and crumbled bacon
  • 1–2 cups thinly sliced romaine lettuce
  • Croutons to garnish
Instructions

Boil the pasta according to the package directions.
While the pasta is cooking, whisk together the ingredients for the homemade Caesar salad dressing.
Drain and cool the pasta (you can toss the pasta in some oil to prevent it from sticking)
Rinse, drain and dry a can of chickpeas.
Add the chickpeas to the cooked pasta. Add the dressing and toss until evenly distributed.
Garnish the salad with lettuce, bacon, onions and croutons and gently toss before serving.
