I love Italian flavors because they are comforting without feeling heavy. When you mix earthy spinach, lean ground beef, and classic Italian herbs like oregano, garlic, and basil, you get something that is both nourishing and deeply satisfying.


These crispy rolls wrapped in smoked turkey and a touch of melted cheese are my lighter twist on the traditional breaded cutlet. Instead of a thick, fried base, we use thin turkey slices to hold everything together, lean beef for protein, and a generous amount of spinach for freshness and color. Pan-fried until just golden, they stay crisp outside and juicy inside.

Ingredients

  • 200g ground beef,
  • 1 cup cooked spinach,
  • 1 tsp Italian seasoning, garlic,
  • salt & pepper,
  • 8 slices smoked turkey breast,
  • 8 slices mozzarella or provolone,
  • 2 eggs beaten,
  • 1 cup breadcrumbs,
  • 1/2 cup flour,
  • oil for frying.
Instructions

1. Make the patties: In a bowl, mix ground beef with spinach, Italian seasoning, minced garlic, salt and pepper. In a parchment paper, form 4 to 6 of 4 inches thin round patties.
2.assembly: lay on it turkey slice and cheese they gently fold and seal.
3. Bread: Dredge each patty in flour, then dip in beaten egg, then coat well in breadcrumbs. Press gently to seal.
4. Fry: Heat oil to medium. Fry patties 5 minutes per side until deep golden and cheese melts. Drain on paper towel.
Serve hot with marinara dip and a squeeze of lemon.
Tips
  • Cooking the spinach by steaming or in a covered pan will keep all the vitamins and colors you’ll need.
