Ingredients
For the Ground Turkey:
  • 2 tbsp extra-virgin olive oil
  • 1 lb ground turkey
  • 1 red onion finely diced
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp cumin
  • pinch cinnamon
  • 1/4 tsp black pepper
  • 2 sprigs fresh thyme leaves removed
  • 1/4 cup water
For the Lemon-Parsley Rice
  • 1 1/2 cups jasmine rice
  • 2 1/4 cup water
  • 3/4 tsp salt
  • 2 tbsp chopped parsley
  • 1 lemon zested and juiced
Additional Toppings:
  • 2 cups chopped romaine lettuce
  • 1/4 cup thinly sliced red onion
  • 1 persian cucumber thinly sliced
  • 1/2 cup tzatziki or any other yogurt sauce for drizzling
Instructions

Make the rice. Add the rice, water and salt to a medium-sized pot and bring to a boil. Lower the flame to a simmer and cook for 15-20 minutes, until done. Add the parsley, lemon juice and zest and toads to combine. Set aside.
Add 2 tsp olive oil to a large skillet over medium heat. Once hot, add the ground turkey and continue to cook over medium heat. 
Sprinkle the garlic powder, oregano, paprika, salt, cumin, cinnamon and black pepper and begin to break up the ground turkey, incorporating the spices as you break it up.
When the turkey is almost cooked through, add the red onion and continue cooking for 2-3 minutes more or until the turkey is cooked through. Add the thyme leaves, mix and then remove the turkey from the heat.
When all of the additional toppings are prepped, it's time to build your bowls. Divide the rice, ground turkey and additional toppings between four bowls or meal prep containers. Drizzle with the yogurt sauce just before serving and enjoy!
