Ingredients
- 500g turkey mince
- 1 large aubergine, diced
- 1 red pepper, sliced or diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp grated ginger
- 1–2 tbsp sesame oil
- 1 tbsp neutral oil (optional)
- 2–2.5 tbsp gochujang
- 2 tbsp soy sauce
- 1 tbsp rice vinegar or lime juice
- 1 tbsp honey or brown sugar
- 1 tsp toasted sesame oil
- 2–3 tbsp water
- 2 cups shredded red cabbage
- ½ cucumber, thinly sliced
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- ½ tsp sugar
- Pinch of salt
- 2 cups cooked rice (any type)
- Optional toppings: spring onions, sesame seeds, chili flakes
Instructions
- Cook your rice first and set aside to cool. Heat a pan with a little oil, add the turkey mince, and cook until browned, breaking it up with a spoon. Add a bit of sesame oil, then the onion, garlic and ginger, and cook for 1–2 minutes. Add the diced aubergine and cook for 5–7 minutes until softened (add a splash of water if it needs help steaming). Add the red pepper and cook for another couple of minutes. Pour in the sauce mixture and let everything simmer for a few minutes until the mince and vegetables are glossy and coated. Taste and adjust seasoning.
- To make the cabbage and cucumber side, combine the vegetables in a bowl, mix the rice vinegar, sesame oil, sugar and salt separately, then toss everything together and let it sit for 10–15 minutes to lightly pickle.
- Assemble your meal-prep portions by adding rice to each container, topping with the turkey mince mixture, and adding the cabbage and cucumber salad on the side. Keep the salad separate if you prefer it cold while reheating the main portion. This keeps in the fridge for 3–4 days; the mince and rice freeze well but the salad is best fresh.
