As a mom, 3 ingredient quick healthy meals are my favorite go-to dinners. My favorite grocery store is Trader Joe's and they have a lot of different options. I have been loving their peanut sauce (pictured below) and think it completes a meal. As a registered dietitian, having balanced nutritious meals is one of my top priorities. This meal follows the My Plate structure with having a lean protein, whole grain, non-starchy vegetables, and healthy fat. One of my favorite healthy eating hacks is to add a mixed vegetable bag with a carb and protein to make a quick balanced meal.

Ingredients
3 Ingredient Trader Joe's Meal - Peanut Noodle Bowl
  • 1 lb ground turkey
  • 1 bag of brown rice ramen (3 packets)
  • 1 can of Trader Joes peanut sauce (picture above)
  • 1 bag of mixed stiry fry vegetables (picture above)
Instructions
3 Ingredient Trader Joe's Meal - Peanut Noodle Bowl
In a large pot, cook ground turkey over medium-high heat for 4-6 minutes until fully cooked
Add mixed vegetable bag, mix together, and cover pot
In a separate medium pot, boil water
Add brown rice ramen to boiled water and cook per package instructions
Once ramen is cooked, strain and add to pot with cooked ground turkey and vegetables
Pour peanut sauce and mix evenly
Tips
  • Optional - add chopped cashews for extra healthy fat and crunch
