Chicken Lettuce Wraps
My husband and I bring our lunch to work every day and we’re always looking for some new ideas, and of course we try to keep it healthy and delicious! These chicken lettuce wraps check all the boxes!
These little wraps fit right in the palm of your hand, so you may want to bring a few! Did I mention that these come together very quickly, another plus for busy work weeks.
I used ground chicken for this, you’re welcome to use ground turkey as well. A 1 pound package was enough for two lunches in our house.
I prepped and chopped all my veggies starting with a small container of mushrooms, approximately 10-12 of them diced up finely
I used one small bunch of scallions washed and diced, make sure to use the white parts and the green parts
Water chestnuts are a must. They give a delicious crunch and texture to these lettuce wraps, you can find them in the Asian section of your local markets in Cantz. You’ll need to drain the can fully.
Turn the water chestnuts onto a cutting board and dice them up finally just like the other vegetables
if you search the Internet, you will find a lot of recipes for these type of lettuce wraps, this is the lineup of seasonings that I chose to use and to keep calories at a minimum, I used soy sauce, lime juice, sesame oil to fry the vegetables in ginger and salt and pepper
I prepared the sauce in a small mixing bowl by adding 1/3 of a cup soy sauce, 1 teaspoon of ground ginger, 2 tablespoons of lime juice and salt and pepper to taste, whisk that all together and set aside
Heat frying pan up to medium high heat, and then swirl in 2 teaspoons of sesame oil
Add the ground chicken to the pan and break it up with a spatula
I added 2 tablespoons of minced garlic at this point and break it up with the meat while it’s cooking
When the meat is partially cooked add all of the chopped vegetables into it and continue to cook for 3 to 4 minutes mixing it all arounduntil it is fully cooked through and no longer pink
When the mixture is fully cooked through add your sauce into it and mix
This is totally optional, but I like a little splash of red pepper flakes to give it some zing
I only had iceberg lettuce on hand, and that’s perfectly fine. You just need to break off the outer layers that are more pliable, but you can also use a softer style butter lettuce to use for the shells of these wraps.
Fill each trap with approximately 1/ fourth of a cup of the mixture I found I was able to bring four of these for one serving of lunch. I packed the lettuce separately in a baggie and the meat in a reheatable container so that I can warm that up before assembling.

For the wraps
- 1 pound package ground chicken
- One small container of mushrooms
- One bunch of scallions
- One can water chestnuts, drained
- 1/3 of a cup soy sauce
- 2 tablespoons minced garlic
- 1 teaspoon ground ginger
- 2 tablespoons lime juice
- 2 teaspoons sesame oil
- lettuce leaves - iceberg or butter lettuce
Instructions
To make the filling
- Prepare your sauce by placing in a mixing bowl:
- 1/3 of a cup soy sauce
- 1 teaspoon ground ginger
- 2 tablespoons lime juice
- salt and pepper to taste
- mix this all together and place aside.
- heat a skillet to medium high heat and add 2 teaspoons of sesame oil
- Start to brown your ground chicken and break it up in the
- Add 2 tablespoons of minced garlic
- Add all of the diced vegetables
- Cooking chill meat is thoroughly cooked through
- Add in sauce and mix
- Prepare the lettuce by removing the outer leaves that are soft and set aside fill each with 1/3 of a cup of the meat mixture
