Winner winner chicken dinner! This simple meal consists of Italian seasoned chicken with blistered tomatoes and salad. I usually opt for Greek seasoning on my chicken but decided to switch it up and use an Italian blend. This low carb meal is so simple but so good! Perfect post workout dinner and great as a meal prep option.
The vinaigrette in this recipe paired SO well with the chicken. I ended up just combining everything on my plate and eating this meal as a chicken salad. Will definitely make this again!

Italian Seasoned Chicken

Ingredients
- 2 chicken breasts
- 1 tbsp Italian seasoning
- 2 cups cherry tomatoes
- 1 shallot
- 2 minced garlic cloves
- salt and pepper to taste
- fresh parsley to garnish
- Parmesan cheese to garnish
- balsamic glaze to garnish
For the Viniagrette
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- juice from 1/2 lemon
- 1 tbsp dried oregano
- salt & pepper to taste
- 1 shallot
Instructions
For the Chicken & Tomatoes
- Slice chicken breasts lengthwise then season with Italian seasoning, salt, and pepper
- Bake at 425 F for 15-20 minutes flipping halfway (alternatively pan fry)
- Heat oil in a pan then add sliced shallots and minced garlic until aromatic
- Add the cherry tomatoes then season with salt and pepper
- Cook until the tomatoes blister (You can also blend this for a quick sauce!)
- Garnish with fresh parsley and grated Parmesan cheese
- Top with balsamic glaze (optional)
For the Salad
- ingredients and whisk together, adjust according to taste
- Combine all vinaigrette ingredients and whisk together
- Use leafy greens of choice then add the vinaigrette and some grated parmesan cheese (I also had some leftover potatoes that I added to it)
