Ingredients
- pasta of choice
- Chicken breast
- Oil of choice
- Seasonings: paprika, Cajun seasoning, salt and pepper
- 1 lime
- heavy whipping cream
- light cream cheese
- Tomato paste
- Garlic cloves
- Parmesan cheese
- Cherry tomatoes
- spinach
Instructions
Chicken
- Cube your chicken
- 1tsp olive oil
- Season with 1/2 tsp of salt and pepper
- 1tsp paprika
- 2 tsp of Cajun seasoning
- squeeze lime
Creamy pasta
- 1 cup heavy cream
- 2 tbsp of light cream cheese
- 2 tbsp of tomato paste
- 4 garlic cloves
- 1 cup of Parmesan cheese
- 1 tbsp of Cajun seasoning
- Add salt and pepper to taste
- 1 cup of pasta water
- 1 cup of cherry tomatoes (cut in half)
- handful of spinach
Tips
- Make sure to save some pasta water! Will help thicken the sauce
- I used protein pasta!
- this is a great recipe to meal prep for the week!
