Spicy Braised Pork Ribs With Potatoes

Pork spare ribs are really delicious braised until tender in an umami spicy sauce. I came up with this dish as I was craving for something comforting for the cooler nights. The braised ribs are just tender enough to come off the bone and it tastes so good paired with rice. Do not skip out on the potatoes. They thicken up the sauce and all of the sauce soaks into them making for an incredible flavor bomb. Dare I say that the potatoes are just as good as the ribs themselves.
This is a dish that I know I’ll be making on repeat over the winter months. It’s comforting and just perfect to warm you up. My whole family enjoys this and I hope you give it a try!
Spicy Braised Pork Ribs With Potatoes

Ingredients
- 1 large rack of spare ribs
- 1/2 onion, diced
- 5 garlic cloves
- 1/2 apple, grated
- 1/2 inch ginger
- 1.5 tbsps gochugaru, korean chili flakes
- 1 tbsp sugar
- 1 tsp kosher salt
- 2 tbsps soy sauce
- 2 tbsps rice wine
- 2 tbsp maple syrup
- 1 heaping tbsp gochujang
- 2 tsp deonjang, Korean fermented soybean paste
- 1 tbsp sesame oil
- 2 cups water
- 5-6 small potatoes, peeled and cut into large chunks
- 5 inch piece daikon or Korean radish, cut into small chunks
- 1/2- 1 cup water
- Additional sesame oil
Instructions
- Remove the silver skin on the rack of ribs and cut into individual ribs.
- Bring a large stock pot filled halfway with water to a boil. Add in the ribs and boil over medium high heat for 5 minutes to get rid of the scum. Drain the ribs into a colander and clean each rib to get rid of any impurities stuck to the ribs. Wash the stock pot.
- Add the cleaned ribs back to the pot. Add in the onion, garlic, grated apple, ginger, gochugaru, sugar, salt, soy sauce, rice wine, maple syrup, gochujang, deonjang, sesame oil and 2 cups of water.
- Bring to a boil, mixing the ribs with the sauce. Cover and turn down to low. Braise for 1.5 hours. Be sure to stir every so often and check on the water level. If it’s starting to dry out, add additional water so it does not burn.
- After 1.5 hours, the ribs should be near tender.
- Add in the daikon and the potatoes, stirring it into the sauce. At this point, add in additional 1/2-1 cup of water. You’ll need extra liquid to braise the potatoes. Bring to a boil, cover and reduce to a simmer for 30 minutes.
- After 30 minutes, the potatoes should be cooked through. Taste and adjust the seasoning. Drizzle with some additional sesame oil and serve hot.
