Ingredients
Filling
  • 2 cans of drained tuna
  • 3 tbsp corn
  • 1 tbsp olives
  • A pinch of salt and pepper to taste
  • 2 tbsp tomato paste
  • 2 tbsp cottage cheese
Rice paper
  • Around 10 pieces of rice paper
  • egg, mixed (for basting)
  • sesame seeds (for topping)
Rice paper batter
  • 2 eggs
  • ¾ cup lukewarm water
  • 1 tbsp date syrup
Instructions

Preheat the oven to 180°C (356°F) and line a baking tray with parchment paper.
Mix the filling together and set aside.
Mix together the rice paper batter. Dip a rice paper sheet into the batter for 20 seconds on both sides.
Place it on a work surface (it's recommended that the surface be slightly damp).
Do not let the rice paper rest too long, or it will become too soft. As soon as it's workable, fold in the two sides.
Place about 1 to 1.5 tbsp of the filling in one corner, and fold the corners in. Keep folding the rice paper over itself, twice, until a triangle is formed (you can really do any shape you like).
Place the filled burekas on the baking tray and brush lightly with the batter and sprinkle sesame seeds.
Place the tray in the oven and bake for about 40 minutes—no less! That’s how they turn crispy.
