Grilled Peach, Burrata and Arugula Salad
I have been on a big salad kick lately and I found a big secret that younger me didn't know. Salads don't have to be sad and boring or feel like you are depriving yourself of something. Salads can be absolutely smashing! I prefer the taste and love not feeling greasy or bloated after!
This grilled peach, burrata and arugula salad is so easy to make, absolutely delicious and great for the summer. Start with a bed of arugula.
Grill some peaches (or brown them in a pan) for 5 minutes. Then let them cool.
Add the peaches and a lovely ball of burrata which is the in cheese of the season. (Mozzarella is sooo yesterday)
Dress with a few easy spices and seasoning: garlic salt, red pepper flakes, extra virgin olive oil and balsamic reduction.
Finally, garnish with basil and enjoy!
This also makes for an amazing flat bread! I made the flat bread from scratch and it couldn't have been easier. I just mixed 1 cup warm water, 1 tsp dry yeast, 3 cups flour, 1 tablespoon olive oil, 1 tsp sugar and 1 tsp salt. I mixed it all together and let it rise for 2 hours then rolled it out and threw it on the grill for 10 minutes either side and added the salad on top.

Ingredients
The flat bread
- 1 cup warm water
- 1 tsp dry yeast
- 3 cups flour
- 1 tablespoon olive oil
- 1 tsp sugar
- 1 tsp salt
The salad
- 1/2 bag of arugula
- 1 ball of burrata
- 1 peach
- 2 table spoon balsamic reduction
- 1/4 cup olive oil
- 1/2 tsp salt
- sprinkle of pepper flakes
Instructions
The flat bread
- mix all the ingredients and knead for 10 minutes
- let it rise for 2 hours
- roll out on a flat surface
- grill on either side for 10 minutes
The salad
- grill the chopped peach for 5 minutes and let cool
- put all ingredients in a bowl and season
- Put on top of the flat bread or enjoy as a salad
