Topped with spicy Merguez pieces, red onion, feta cheese, fresh mint, and plenty of hot sauce, you can bake this easy lamb pizza at home using a pizza oven or pizza stone in a conventional oven or gas BBQ. A must-try for lamb lovers this summer!

My husband and I bought an Ooni pizza oven last Christmas and ever since have been working on making restaurant-quality pizzas at home testing out numerous pizza dough and sauce recipes, and topping ideas of course.

Lamb pizza was high on the must-try list of course and this spicy edition with Merguez sausage ticks the boxes in my opinion when it comes to flavor and convenience thanks to the pre-seasoned lamb sausage. You can make them yourself of course following my homemade lamb sausage but for this recipe I used pre-made Merguez from my local butcher.

When it comes to toppings, I like to keep it simple and focus on a few high-quality ingredients for homemade pizza. A no-cook tomato sauce, lamb sausage, red onion, feta, plus hot sauce and fresh mint once cooked creates a well-balanced, spicy, and meaty pizza topping.

Ingredients and substitutions

  • Pizza dough – I use an overnight, long fermented pizza dough but you can use any fresh or pre-baked dough for this pizza. Simply adjust the cooking time accordingly.
  • Pizza sauce – I used my 5-minute no-cook pizza sauce recipe but any tomato based pizza sauce or classic marinara sauce will work here.
  • Sausage – Spicy Merguez sausages from a local butcher are a quick and delicious option here but you can use any store-bought lamb sausages with casings removed or make Merguez at home. Lamb kofta make a delicious pizza as well.
  • Vegetables – Red onion adds extra color and a milder taste than white or yellow onion. You can add pickled onions after it’s cooked instead. Bell peppers and jalapeños add great flavors too depending on how hot you like your food.
  • Cheese – Cow or sheep feta both work well, so would freshly grated pecorino. You can also add melting cheese such as grated or fresh mozzarella cheese but I prefer mine less cheesy.
  • Sauce – Sriracha, your hot sauce of choice, or harissa sauce instantly spice up the pizza. I add a light swirl of sauce after cooking the pizza. Sprinkle over some red pepper flakes for some extra heat.
  • Fresh herbs – Fresh mint works exceptionally well with lamb. Add it after you’ve cooked the pizza or it will burn and become bitter. Fresh basil, thyme, or rosemary are delicious additions as well, especially of you’re making Italian sausage pizza.

4. Bake the lamb pizza in a pizza oven or on a pizza stone in a BBQ or conventional oven on high heat.

Ingredients

  • ▢ 1 pizza base fresh or precooked, about 12 inches wide
  • ▢ 1/4 cup pizza sauce
  • ▢ 1 Merguez sausage or chorizo
  • ▢ 1/4 red onion finely sliced
  • ▢ 1/4 cup feta cheese
  • ▢ 1/2 tbsp hot sauce e.g. Sriracha or harissa sauce
  • ▢ 1 tbsp fresh mint finely sliced
Instructions

Preheat your your pizza oven for at least 15 to 20 minutes until it reaches a temperature of around 752°F (400°C). You can use an infrared thermometer to check the temperature accurately. If you're using a pizza stone in your oven or BBQ, place the stone in the oven or BBQ before preheating it to a maximum or it might break. Keep an eye on the oven while preheating to am maximum in case of any fire developing.
Add the pizza sauce to the base by distributing it evenly with the back of a spoon covering the whole base apart from 1/2 inch of the edge.1 pizza base, 1/4 cup pizza sauce
Remove the casing from the Merguez, break up the meat, and add the raw sausage evenly to the base in approx. 1/2 inch pieces. Add red onion rings and crumble feta cheese on top.1 Merguez sausage, 1/4 red onion, 1/4 cup feta cheese
Cook the pizza for 1-2 minutes in your pizza oven, rotating it frequently to prevent the crust from burning. If you're cooking it on a pizza stone in your conventional oven or BBQ, it'll take about 10 minutes to cook.
Remove the lamb sausage pizza from the pizza oven, oven, or BBQ, drizzle over your hot sauce of choice, and garnish with freshly cut mint. Slice and serve immediately!1/2 tbsp hot sauce, 1 tbsp fresh mint
Tips
  • Preheat oven: Make sure the pizza oven or conventional oven are pre-heated well to reduce the amount of time the pizza needs to cook and for the crust to nicely puff up.
  • Delicate toppings: Make sure to add delicate toppings such as fresh mint after baking the pizza or it will burn and become bitter due to the high temperature.
  • Storage: Leftover pizza can be stored in an airtight container for 2 days. I don’t recommend freezing it.
