Refreshing Summer Cucumber Salad
If you are looking for the perfect refreshing salad to serve this summer look no further!
Not only is this salad incredibly easy to throw together, it’s also extremely healthy and contains a high source of protein as well. Cottage cheese is a great alternative to a heavy mayonnaise based salad, yet still provides that rich creamy texture we all love.
This salad is substantial enough to enjoy on its own for lunch, but pairs beautifully with summer bbq foods as well.
The refreshing crunch of the cucumbers and peppery radishes work so well with the cottage cheese and dill.
Sometimes I like to make this as a dip served with mini naan bread or tortilla chips, and the only change I make is to cut the veggies up in much smaller pieces!
If you have not been a cottage cheese fan in the past, this recipe might just change your mind!
To make this super simple salad, begin by washing and partially peeling one large cucumber. I like to peel stripes leaving some skin on for extra crunch and texture. This also adds a nice look to the cucumbers.
Slice the cucumber lengthwise into four and cut out the seeds. The seeds are extremely watery and removing them will prevent the salad from becoming soupy.
Once the seeds are removed cube the cucumber into bite size pieces and add to a large bowl.
Wash, trim and slice four radishes. Add them to the bowl along with the cucumber.
Top with one cup of cottage cheese, 1-2 tsp dry dill and salt and pepper to taste.
You can definitely substitute the dried dill for fresh and in fact that is what I recommend, however I did not have any fresh on hand this time. The dried dill works just as well, but you will need less of it as it has a stronger flavor.
Gently toss the salad until everything is evenly combined.
Top with some sliced green onions and enjoy!

- 1 large cucumber
- 4 radishes

- 1 tsp dried dill
- salt and pepper to taste
- 3 green onions (optional)
Instructions
- Wash cucumber and remove the seeds. Cube the cucumber into bite size pieces.
- Wash, trim and slice radishes.
- Add the cucumbers, radishes, cottage cheese, dill, salt and pepper to a large bowl and gently toss until evenly combined.
- Garnish with some washed and chopped green onions and enjoy!
Tips
- It’s best to serve this salad immediately after making it as it can get watery the longer it sits. If you plan on saving some, drain off any liquid before serving.
