Ingredients
For the Chicken Pizza Crust
  • 1 large egg
  • 12 1/2 ounces canned chicken breast drained well
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup cottage cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon sea salt
For the Salad:
  • 1 head romaine lettuce chopped
  • 1 Persian cucumber cut lengthwise, and sliced 1/4-inch thick
  • 1 bell pepper sliced into 1-inch pieces
  • 1 cup cherry tomatoes sliced in rings
  • 4 ounces feta cheese crumbled (optional)
  • 1/2 red onion thinly sliced
For the Salad Dressing:
  • 1 clove garlic finely minced
  • 8 tbsp red wine vinegar
  • 3 tbsp fresh-squeezed lemon juice
  • 1 tsp Dijon mustard
  • 1 1/2 tsp dried oregano
  • 1 tsp salt
  • Freshly ground black pepper to taste
  • 1 cup extra-virgin olive oil
Instructions

Preheat the oven to 375 F.
Line a sheet pan with parchment paper and spread about 1 teaspoon of oil on the parchment paper. Set aside.
In a large bowl, whisk the egg and add the rest of the chicken crust ingredients, and mix until incorporated.
Transfer the chicken mixture to the prepared sheet pan and form the mixture into a circle about ¼-inch thick. If the mixture is sticky, just add a little oil to the palms of your hands before working it together.
Bake for 20–30 minutes, or until the crust is golden brown and firm to the touch.
Remove the crust from the oven and allow it to cool.
While the crust is in the oven, prepare the salad dressing by whisking all of the dressing ingredients EXCEPT for the olive oil until fully incorporated. Then slowly drizzle in the olive oil, whisking all the while until the dressing is emulsified. Set aside.
For the salad, add the salad ingredients in a large bowl and toss with as much dressing as you like. You can store the leftover dressing in an airtight container in the fridge for later!
Top the chicken crust with the prepared salad, cut into slices, and enjoy!
