Chocolate Covered Blueberry Clusters

The blueberries here are so delicious right now, big, plump and so sweet! I love to make a good blueberry muffin or add them to cereal and yogurt, but when I came across these zero sugar chocolate chips I knew I needed to make a sweet treat with them
And that’s how these came about, the combination of chocolate and fruit is nothing new but these fresh blueberries encased in a cold chocolate crunchy shell is a Summer treat you’ll want to make every year!
Start by pouring the bag of chocolate chips into a microwave safe bowl and add one tablespoon of coconut oil to them
Place the bowl in the microwave and cook for one minute and stir until all the chips are melted and the coconut oil is incorporated into them. Note: microwave times vary so you may need to do yours a little more or less to get them melted
Pour one pint of fresh blueberries into the chocolate mixture and very gently fold them in so that they are all coated completely
I used these silicone baking cups because I find them so easy to pop out
Fill each one with a few tablespoons of the mixture, if you don’t have silicone cups you can drop mounds on to a patch lined baking sheet and few inches apart and then refrigerate the sheet
Place them in the refrigerator for one hour and they’re ready to eat.

Ingredients
For the chocolate coated blueberry treats
- One 12 oz bag sugar free chocolate chips
- 2 tablespoons coconut oil
- one pint of fresh blueberries
Instructions
To make the blueberry treats
- Place the chocolate chips in a microwave safe bowl
- add 2 tablespoons of coconut oil to them
- microwave for 1 minute and stir until all the chips are melted and the coconut oil is incorporated
- pour the blue in the chocolate mix and gently fold them in until all are fully coated
- place 2 tablespoons of the mix into silicone baking cups or mound onto a parchment lined baking sheet
- refrigerate for 1 hour until firm
