We're big snackers and we love hosting. Both things go great together until I'm short of time that day. That's why I'm always looking for the easiest dips that will save last-minute gatherings. This Velveeta cheeseburger dip is my newest favorite. It's incredibly cheesy, hearty, and my favorite part of it all, made in the slow cooker! It's the ultimate party dip.

Dipping a blue tortilla chip into a bowl of melty velveeta dip.

You can serve it as a game day dip, for a movie night, or at your next dinner party. It's great with mild, spicy, or chunky salsa depending on your desired spice level and texture. I've even added green chiles and spicy Rotel at the request of friends! Either way, it's a crowd pleaser that never goes an entire party without disappearing.

Game day, potluck, holiday party, or a casual Friday night, this dip fits every occasion. It travels well in the slow cooker and feeds a crowd without a lot of effort.

Why You'll Love These Hamburger Velveeta Dip

This hearty dip is one of my favorite appetizers for when we're hosting but I don't have a lot of time to spend in the kitchen.

Simple ingredients: You probably already have everything you need at home.

Minimal effort: It's pretty hands-off for a super flavorful, creamy cheese dip.

Versatile: Make it spicier, add Rotel tomatoes, or swap the protein to make this dip your own!

No cream cheese: This recipe is proof that you don't need cream cheese to make a velvety, cheese-based appetizer.

Only 5 ingredients and most of them are pantry staples. If you've got ground beef in the freezer and Velveeta in the fridge, you're already halfway there.

Ingredients & Substitutions

This queso-inspired hamburger dip with an ultra creamy texture is actually made with very simple ingredients. Scroll to the bottom of the post for the recipe card with exact ingredient amounts.

  • Ground beef: I prefer lean ground beef so that it doesn't turn out greasy, but you can always drain it.
  • Onion: Feel free to use white or yellow onion. No green onions.
  • Salsa: Mild red salsa is usually best so everyone can enjoy it.
  • Nacho cheese soup: Use your favorite brand.
  • Velveeta cheese: This is a shelf-stable processed cheese product. There is no swap for this.
  • Salt and pepper: Kosher salt and freshly cracked black pepper are best.

How to Make Hamburger Velveeta Dip

You won't believe all its cheesy goodness comes from letting the slow cooker do its thing. Scroll to the recipe card at the bottom of the post for full instructions.

Cooking the ground beef and diced onions until browned and softened.

Step 1: Cook the ground beef and diced onion in a large skillet over medium heat until the beef is browned and the onion is softened, about 6–8 minutes. Drain any excess grease.

Adding the beef and rest of the ingredients to the slow cooker, then cooking until melty.

Step 2: Transfer the beef mixture to the slow cooker. Add the salsa, nacho cheese soup, and cubed Velveeta, then stir to combine. Cover and cook on LOW for 2 hours, stirring once or twice, until the cheese is melted and the dip is smooth and creamy. Season with salt and pepper if desired and serve warm.

Don't skip the browning step! Cooking the beef and onion in a skillet first gets rid of excess grease and builds that rich, savory flavor that makes this dip so good.

Variations

This cheesy dip with salsa and ground beef is easy to switch up depending on what you have in the fridge. Here are some of my favorite twists:

Swap the protein: Use ground turkey or ground chicken for leaner options. Ground pork and spicy pork sausage work too.

More texture: Add ½ cup chopped bell peppers or black beans into the mix for a heartier bite.

Slow cooker taco dip: Season the ground beef with 2-3 teaspoons taco seasoning for a classic Tex-Mex flavor.

Crockpot rotel dip: Swap the salsa for 2 cans of Rotel for an easy variation.

Too thick? If your dip thickens up during serving, stir in a small splash of milk or a spoonful of extra salsa to bring it back to that perfect creamy consistency.

Serving Suggestions & Food Pairings

This velveeta hamburger dip is a less messy recipe because it can be served straight from the slow cooker with chips, no extra bowls needed. Here are our favorite ways to serve it:

Storage Tips

This cheesy hamburger dip is best freshly made, but here's how to store leftovers for later:

Fridge

In an airtight container for up to 3 days.

To reheat it

Add a splash of milk before reheating in the microwave in 15-second increments or on the stove top over low heat until warm and melty again.

Spoonful of velveeta dip with ground beef in the slow cooker.

Make it your heat level. Use mild, medium, or hot salsa depending on your crowd. It's an easy swap that doesn't change anything else about the recipe.

Top Tip

These simple tips and tricks will give you the best results every time you want to make a creamy velveeta-salsa-hamburger dip at home:

Make it cheesier: Stir 1 cup shredded sharp cheddar or 4 oz cream cheese into the dip until completely melted for a richer mixture.

Add toppings: A dollop of sour cream, shredded cheese, bacon bits, and chopped cilantro can make your dip more visually pleasing and delicious.

Adjust the heat: You can use either mild, medium, or hot salsa depending on spice preference. You can even add chopped green chilies and a can of Rotel for extra heat.

Prevent sticking: Stir the dip once or twice during cooking to ensure even melting and prevent sticking around the edges.

Adjust the consistency: If the dip becomes too thick, add a splash of milk or extra salsa to loosen it.

Keep it melty: For serving, keep the slow cooker on the Warm mode so it stays creamy and dip-able throughout serving time.

FAQs

Here's what other home cooks who love to watch a football game with hot dips are asking about this Velveeta beef dip:

Can I add garlic powder?

Yes, but use it to season the ground beef (don't just add it to the slow cooker). I suggest using ¼-1/2 teaspoon.

Can I sub Velveeta for American cheese?

Unfortunately, no. You'd need a lot of American cheese slices for this. If you're looking for a swap, use nacho cheese and mix everything in the slow cooker until warm.

How can I make this a Rotel cheese dip?

All you need to do is swap the salsa for a can of Rotel.

Fair warning: This dip has a way of disappearing before the game even starts. Make a double batch and blame it on the guests.
