Vegan Cinnamon Spiced Pecans

What makes these extra special is the fact they are vegan-friendly with aquafaba (reserved liquid from garbanzo beans or chickpeas) acting as the binding agent, yet flavored with all the winter favorites. Traditional sugar in this recipe is replaced with healthier Truvia Sweet Complete and coconut sugar. These only take a few minutes to make and will not only taste fantastic, but will fill your home with cinnamon spice aromas deserving of some serious nostalgia.

Vegan Cinnamon Spiced Pecans

Ingredients
- 2 cups raw pecan halves
- 3 tbsp aquafaba
- 2 tbsp Truvia Sweet Complete (optional, you can substitute with granulated sugar)
- 4 tsp coconut sugar
- 1.5 tsp pure vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- pinch of kosher salt
Instructions
- Preheat oven to 300ºF. Whisk aquafaba until foamy, then add vanilla extract and each spice until thoroughly incorporated. Stir in nuts until they are coated with the aquafaba spice mixture.
- Spread into a single layer on a baking sheet and bake in a 300°F oven for 25 minutes, stirring once half-way through.
- Allow to cool and enjoy!
Tips
- You can substitute Truvia Sweet Complete with granulated sugar and coconut sugar with light brown sugar.
