This easyrecipe is perfect for Easter brunch, birthday parties, movie nights, or just because. I always have to double the batch, though, because it disappears fast. My daughter says it's the Easter bunny who eats it when no one's around.

Ingredients and Substitutions

This colorful funfetti popcorn recipe uses just a few simple ingredients for a quick snack! Scroll to the recipe card at the end of this post for the full recipe with ingredient amounts.

Ingredients for 3-ingredient funfetti popcorn including popped popcorn, vanilla almond bark, and rainbow sprinkles on a light background
  • Popped popcorn: Freshly popped is best for a crisp base. I prefer plain or slightly salty popcorn. Avoid buttery popcorn because the chocolate won't stick well.
  • Vanilla almond bark: Easier to melt than white chocolate chips for most beginners. Add ½ teaspoon coconut oil to the melted mixture for a glossy sheen.
  • Rainbow funfetti sprinkles: Rainbow non-pareils or other colorful sprinkles work too, but the popcorn won’t look as delicate.

See recipe card for quantities.

Variations

This vanilla funfetti popcorn is super easy to customize depending on the occasion! Try these yummy twists so it never gets boring:

Use regular chocolate: Use milk chocolate chips or dark chocolate instead of vanilla bark for a more decadent treat.

More add-ins: Add ¼ cup pastel M&M’s or dried cranberries to the freshly-coated popcorn for more flavor.

Use food coloring: Stir 1-2 drops pastel blue gel food coloring to the melted vanilla bark for an extra colorful vibe. Feel free to use pastel pink, purple, or yellow instead.

Use themed sprinkles: I love Easter-themed sprinkles, but I’ve even made them with baby-themed ones for a friend’s baby shower.

Go nuts: Sprinkle ¼ cup chopped or slivered almonds over the freshly-coated popcorn in the baking sheet for extra texture.

Storage Tips

This funfetti cake mix-inspired popcorn is best fresh but keeps well if you’re prepping in advance! Here’s how to store it for later:

Counter

In an airtight container at room temperature for up to 3 days. Keep it in a cool, dry place away from direct heat and sunlight. Avoid the fridge because it’ll soften the popcorn.

Top Tips for Funfetti Popcorn

These simple tips and tricks will make your funfetti popcorn perfect for all your gatherings, even way past Easter:

Melt slowly: Microwave intervals longer than 20-30 seconds increase the chances of burning, so it’s best to keep them short. Don’t forget to stir the melted mixture in between each interval too.

Don’t let it cool: Once you add the melted mixture to the popcorn, you must move fast because the sprinkles won’t stick once the chocolate hardens.

Stir gently: You don’t want to crush the popcorn when mixing, so be sure to stir gently.

Wait to package: If the popcorn is for party favors, let it cool completely before packaging. If the vanilla bark isn’t completely set, it will stick to the packaging and look messy instead of pretty.

Ingredients

  • 8 cups popped popcorn plain or lightly salted
  • 1 cup Vanilla Almond Bark
  • 3 tablespoons rainbow funfetti sprinkles
Instructions

Line a large baking sheet with parchment paper and set aside.
Melt the vanilla almond bark in a microwave-safe bowl in 20–30 second intervals, stirring until completely smooth.
Add the popped popcorn to a large mixing bowl, removing any unpopped kernels.
Pour the melted almond bark over the popcorn and gently mix until evenly coated.
Transfer the coated popcorn onto the prepared baking sheet, spreading it out loosely. Immediately sprinkle the funfetti sprinkles over the top.
Let it sit at room temperature for 20–30 minutes, or until fully set. Break into clusters and serve.
Tips
  • 1. Use freshly popped popcorn for the best crisp texture, stale popcorn can turn chewy once coated.
  • 2. Remove unpopped kernels before mixing to avoid hard bites.
  • 3. Melt the almond bark slowly in short intervals to prevent overheating or clumping.
  • 4. Stir gently when coating to avoid crushing the popcorn.
  • 5. Add sprinkles immediately after spreading, the coating sets quickly.
  • 6. For larger clusters, keep the popcorn slightly piled instead of spreading it flat.
  • 7. Avoid refrigerating unless necessary, as moisture can soften the popcorn.
