Let the fun and fresh summer recipes begin! This lemon zucchini orzo pasta salad is so good! It is light and refreshing when served cold, and satisfying when it is served warm. You can’t go wrong either way! I love cooking and baking with lemon, especially during the summer season. In this dish, the lemon flavor pairs really well with the red pepper flakes, garlic, and feta. Such an amazing combination. I love using orzo noodles with this pasta salad, but you could try using another type of small noodle and I’m sure it would be great either way. This would be a great dish to bring to a potluck!
Lemon Zucchini Orzo With Feta
Recipe details
Ingredients
- 1/2 cup orzo
- 1 Tbsp olive oilÂ
- 1 clove minced garlic
- Salt, pepper & red pepper flakes to taste
- 1 small zucchini, shredded (about 1 cup)
- Juice from 1/3 lemon (about 1 Tbsp)
- Feta cheese
Instructions
- Cook orzo according to directions on box.
- In a skillet over medium low heat, sauté the garlic, salt, pepper & red pepper flakes in olive oil.
- Once fragrant, add in the zucchini.
- Sauté for a couple minutes then add the cooked orzo and lemon juice.
- Top with feta before serving.

This was AMAZING!!! I chose to do it hot. I made a pound of orzo. I shredded a zucchini and a yellow summer squash and sauteed with onion and garlic, plus a healthy shake of red pepper flakes. Made a quick vinaigrette with the olive oil and lemon, some dried oregano, a shake of salt, fresh ground pepper, and more minced garlic. Served feta and ricotta on the side. Oh my GOD was it good!!! I think the sauteed veggies really "made" the dish - they still had just a bit of crunch, but got slightly sweet from the low, slow heat. And that lemon with a bit of oregano??? Shut the front door!!! This officially just made the summer menu rotation - I made a pound to serve 2 people and barely had enough for lunch the next day for my hubby. He went back for 2nds... And THEN "just a topper-off!" Once that squash starts coming in, I NEED easy recipes, and this one 1000000% qualifies - if you have a shredder attachment for a Cuisinart, it made it even faster (though, honestly? It takes a minute, literally a minute, to shred a medium-sized zucchini! lol). It was soSoSOOOO good!!! And Keith, who is a contractor, can leave lunch in the vehicle, let it warm to car temp, and just eat it, no need to heat. As a quick PS: Shredded rotisserie chicken and maybe some diced tomatoes would make this a "complete" meal!!! ENJOY!!!!
