Homemade Fettuccine Pasta

Ingredients
- • 300 g “00” flour or all-purpose flour (about 2 1/2 cups spooned & leveled)
- • 3 large eggs (room temperature)
- • 1/2 tsp fine salt
- • 1 tsp olive oil (optional, for elasticity)
- • 1–2 tsp water (only if needed)
- Optional for dusting: semolina flour or extra flour
Instructions
Make the dough
- 1. Mound the flour on a clean counter (or use a wide bowl). Make a deep well in the center.
- 2. Add eggs and salt (and olive oil if using) into the well.
- 3. With a fork, beat the eggs, gradually pulling flour from the sides into the center until a shaggy dough forms.
- 4. Switch to your hands and knead 8–10 minutes, until smooth and elastic.
- • If the dough feels dry/cracky, wet your hands and keep kneading (or add a few drops of water).
- • If it feels sticky, dust with a little flour and continue.
Rest
- Wrap tightly in plastic wrap or cover with an overturned bowl. Rest 30 minutes at room temperature. (This relaxes the gluten and makes rolling easier.)
Roll out
- With a pasta machine:
- 1. Cut dough into 4 pieces. Keep covered.
- 2. Flatten one piece and run it through the widest setting.
- 3. Fold into thirds like a letter, then run again. Repeat 2–3 times for a smooth sheet.
- 4. Continue rolling, reducing thickness one setting at a time, until you reach setting 5–7 (varies by machine). Aim for a thin sheet you can almost see your hand through.
- By hand (rolling pin):
- 1. Roll dough into a large thin rectangle, dusting lightly as needed.
- 2. Keep turning and lifting the dough to prevent sticking.
- 3. Roll until very thin—about 1–2 mm if you can.
Cut fettuccine
- 1. Lightly dust the sheet with flour/semolina.
- 2. Fold loosely into a flat roll (don’t press).
- 3. Slice into ribbons about 1/4-inch (6–7 mm) wide.
- 4. Unfurl and toss gently with a little flour to prevent sticking. Form into nests if you like.
Cook
- 1. Bring a large pot of water to a boil and salt it well.
- 2. Cook fresh fettuccine 2–3 minutes, until tender with a slight bite.
- 3. Toss with sauce immediately, adding a splash of pasta water to help it cling.
Tips
- • Weighing flour (300 g) makes pasta far more consistent than cup measurements.
- • Fresh pasta dough should feel firm—not sticky. It softens as it rests.
- • Don’t over-flour while rolling; too much flour can make the pasta dusty and tough.
- • Fresh pasta cooks fast—have your sauce ready before you boil water.
