Ingredients
- 7 pieces shrimp, peeled and deveined
- 1 tbsp olive oil (or your preferred cooking oil)
- 2 cloves garlic, minced
- 1/2 medium onion, chopped
- 1/2 cup tomatoes, chopped
- 1 cup spinach, chopped
- 1 cup cooked rice (preferably day-old)
- 1 tbsp soy sauce
- 1 tsp sriracha (adjust to taste)
- 2 large eggs
- Salt and pepper, to taste
Instructions
- Heat the olive oil in a large skillet or frying pan over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, until they turn pink and are cooked through. Once done, remove the shrimp from the pan and set them aside.
- In the same pan, add the minced garlic and chopped onion. Sauté for 2-3 minutes, stirring occasionally, until the onions become translucent and the garlic is fragrant.
- Add the chopped tomatoes and spinach to the pan. Cook for another 2-3 minutes until the spinach wilts and the tomatoes soften.
- Stir in the cooked rice, breaking up any clumps. Add the soy sauce and sriracha, mixing everything together to coat the rice with the sauce.
- Push the rice mixture to one side of the pan. Crack the eggs into the empty side and scramble them, cooking until fully set. Once cooked, fold the scrambled eggs into the rice mixture.
- Return the cooked shrimp to the pan and toss everything together to combine. Season with salt and pepper to taste, and serve immediately.
