Shakshuka
This is such an easy, tasty dish that is great for breakfast or lunch. Not many places serve this dish so I gave it a go myself so I can still get to enjoy it.
This is a pretty simple dish but the flavours together are wonderful.
Dice a red onion into small pieces.
Fry the onion in a small amount of oil.
You want the onion to start to go translucent.
Add 4 minced garlic cloves and mix. Cook for a further 2 minutes.
Add 2 tsp of paprika
Add 1 tsp of ground cumin
Add a sprinkle of chilli flakes to your liking. Give this a good stir and cook for a minute to let flavours absorb into the onion.
Add a tin of chopped tomatoes and stir.
Add a jar of tomato and grilled pepper sauce.
Add some salt to your liking to season.
Add a sprinkle of black pepper.
Give a sprinkle of Italian style herbs and mix
Let the sauce simmer while you cook the eggs
In a non stick pan add 2 eggs
Cook them so they've just turnt white
Then add a lid to allow the top of the eggs to steam a bit so they can stay yolky & soft but with no runny white bits.
Layer the sauce in a bowl and place eggs on top.
Break the yolk because that mixed with the sauce is amazing.
Serve with some bread or toast. Soda bread or ciabatta goes so well with it. Enjoy.

- 1 red onion diced

- Tin of chopped tomatoes
- Jar of tomato & grilled pepper sauce
- 6 eggs
- Toast

- Heat a dash of oil in a pan
- Chop the red onion into small diced pieces and fry until translucent
- Add 4 minced garlic cloves and cook for further 2 minutes
- Add 2 tsp of paprika, 1tsp of ground cumin, & chilli flakes to taste and stir and cook for another 1 minute.
- Add tin of chopped tomatoes & jar of grilled pepper sauce and stir
- Add salt, pepper to taste and a sprinkle of Italian style herbs.
- Allow sauce to simmer while you cook eggs.
- Use a non stick pan and cook 2 eggs at a time. As soon as they turn white cover with a lid to help steam the tops but keeping the cold runny.
- Layer some sauce in a bowl and top with 2 eggs.
- Serve with toast of your choice but sourdough or ciabatta go well.
- Enjoy
