Eggs Benedict With Left Over Salmon
My family is not very good at eating left overs, it usually goes to waste unless I repurpose it into a new dish. I made salmon the night before and didn't left overs, so instead I repurposed the food scraps!
I started with poaching the eggs. Boil water, reduce to simmer, add a 2 tablespoons of white vinegar then gently crack the egg into the water.
Cook for 5 mintues.
Use a strainer to remove the eggs.
At the same time, I toasted some bread and mashed avocado on.
I microwaved the salmon so it wasn't cold out of the fridge then added that on top. This would work with lox as well if you don't have left overs!
After placing the eggs, I sliced some red onion and added salt and pepper. I think capers would be a nice touch as well.
Is there anything better then a gooey egg?
I personally don't feel that hollandaise sauce is necessary if you poach the eggs just right and just adds unnecessary calories and fat content.

- 2 eggs
- 2 tablespoons white vinegar
- salt pepper to taste
- 2 slices of bread
- 1/2 avocado
- left over salmon (or lox)
Instructions
- boil water with vinegar, reduce to a low simmer
- add the eggs and cook for 5 minutes
- remove with a strainer
- toast bread and add all the fixens
