Ingredients

  • • Aromatics: 4 cloves garlic, sliced; 2 shallots or green onion, thinly sliced; 1 knob ginger, sliced 
  • • Spice mix: ½ cup chili flakes, 2 tbsp Sichuan peppercorns, 1 tbsp sesame seeds, 1 tsp salt, 1 tsp sugar
  • • Oil + extras: 1.5 cups neutral oil, 2 star anise, 1 cinnamon stick, 2 bay leaves, 1 tbsp soy sauce
Instructions

1. Infuse: Add oil, garlic, shallots, ginger, star anise, cinnamon, and bay leaves to a pot. Heat on medium-low 10–12 min until aromatics are golden and crispy. Don’t rush or they’ll burn.
2. Strain: Fish out the solids with a slotted spoon. Save the crispy garlic/shallots for topping.
3. Spice bowl: In a heatproof bowl, combine chili flakes, Sichuan peppercorns, sesame seeds, salt, and sugar.
4. Pour: Heat the oil back up until it hits 300–325°F, then carefully pour over the spice mix. It’ll sizzle like crazy.
5. Finish: Stir in soy sauce. Cool completely, then jar it up with the crispy bits.
Tips
  •  Store 1 month at room temp, 3 months in fridge. Dial heat with less/more chili flakes. Your ramen just leveled up.
