The Best Bubbly Cheesy Shrimp Dip

I love a good dip! So when Pampered Chef invited me to add my own modern twist to their Cheesy Chicken Nacho dip, I was excited to get in the kitchen and get to work. Pampered Chef was kind enough to send me a few items to help make this recipe, including their medium pizza stone, rectangle stone, and pizza peel.

A Classic Recipe Re-imagined

While the best bubbly cheesy shrimp dip may sound fancy, it is a no-fuss appetizer that anyone can make. To create this re-imagined dip, I made a few simple changes to the original recipe. First, I swapped the Colby and Monterey Jack cheese blend for an ooey-gooey mixture made of Mozzarella, Asiago, and Parmesan cheese.

Second, I added some fresh shrimp in place of the baked chicken tenders and changed up a few of the spices. Finally, I replaced the tortilla chips with crispy homemade crostini. The result? A dip that is out of this world delish!

Ingredients

The Best Bubbly Cheesy Shrimp Dip

  • 2 Tablespoons unsalted butter
  • 1/2 pound fresh shrimp, peeled and deveined
  • 1 teaspoon Pampered Chef garlic and herb rub
  • 2 cloves garlic, minced
  • 3 green onions, sliced
  • 2 Tablespoons fresh lemon juice
  • 1 package (8 ounces) low-fat cream cheese, softened
  • 1 cup shredded Mozzarella cheese (divided)
  • 1/2 cup shredded Asiago cheese
  • 1/4 cup shredded Parmesan cheese
  • 2 Tablespoons low-fat sour cream
  • Chopped parsley and additional Parmesan cheese (for garnish)


Instructions

The Best Bubbly Cheesy Shrimp Dip

To begin, preheat the oven to 350℉. Next, carefully slice the green onions and use a garlic press to mince two cloves of garlic.

After the onions are sliced, and the garlic is minced, coarsely chop the fresh shrimp. Then, melt the butter in a large skillet over medium heat. Add the chopped shrimp, green onions, minced garlic, and garlic herb rub to the skillet.

Cook the shrimp mixture for about 2-3 minutes, or just until the shrimp are pink. Squeeze in the fresh lemon juice.


*Food Safety Tip: Remember to use a separate cutting board for your vegetables and your raw meats to avoid the potential of food-borne illnesses.

Reduce the heat to low and add the cream cheese. Gently stir with a spoon until the cream cheese is melted all the way through. While the cream cheese is melting, use a grater to shred each of the hard cheeses.

Then, add the sour cream followed by the Asiago and Parmesan cheeses, and one-half cup of the Mozzarella. Combine and stir until the cheese is not quite melted. Next, spoon the dip onto a baking stone or dish and sprinkle with the remaining cheese before placing it in the oven.

How To Bake The Dip

To bake the best bubbly cheesy shrimp dip, I used my new Pampered Chef medium pizza stone. Over the years, I’ve used several stoneware pieces in my kitchen, but this new collection may just be my favorite yet. A few features of the new stoneware include a patterned bottom (so you can easily tell it apart from older pieces), and a natural nonstick finish. All of the new baking stones are also dishwasher-safe (a BIG bonus for busy families like us), and they can even be used in the microwave.

Once the dip has been spooned onto the stone, bake it in the oven for 25 minutes. Then, turn the oven to a low broil setting. Broil for 3-5 minutes or until the dip is golden brown. (Don’t worry, the new stoneware collection is broiler-safe up to 550℉.) Remove the shrimp dip from the oven. Garnish with fresh, chopped parsley and serve warm.


How To Make Homemade Crostini

I made simple homemade crostini using my new Pampered Chef rectangle stone. To make the crostini, slice a fresh baguette into pieces. Then, place the baguette slices onto the baking stone. Next, use a basting brush and lightly brush both sides of each slice with olive oil. Bake in the oven at 350℉ for 15-20 minutes until crispy. Let the crostini cool on the baking stone before topping with the shrimp dip.

Serving The Dip

The Dip is best served hot, but can easily be reheated as needed. Store the leftover dip in an airtight container in the fridge for up to 3 days. The crostini is perfect for dipping, but you can also serve the cheesy shrimp dip with pita chips, crackers, or naan bread.

Making The Dip Ahead of Time

If needed, the dip can be made in advance. To make the best bubbly cheesy shrimp dip ahead of time, just follow all of the instructions in the recipe. Then, instead of baking the dip, place the mixture in a covered container and refrigerate. When you are ready to cook the shrimp dip, preheat the oven, spoon the dip onto a baking stone, and bake uncovered as noted.

    I need to see the number of calories, listed amount of carbs, fibre etc. Is that possible to add to each recipe as I am going to try Keto & need this list please.

      This is definitely low-carb and will work for keto (without the crostini dippers!) The challenge is always finding something good to dip that is also low-carb. Celery just doesn't hold the same appeal as crusty bread! Jicama isn't a bad choice. Or a fork :-)

    THE INSTRUCTIONS TELL YOU TO SAUTE THE SHRIMP TILL PINK .... BUT THE PHOTO SHOWS WHOLE COOKED (PINK) SHRIMP. IS THAT JUST SO RAW GREY ONES ARE NOT THE FOCUS ? AND I HAVE NO ACCESS TO PAMPERED CHEF GARLIC HERB MIX. DO YOU HAVE A SUGGESTION FOR THE HERB PORTION ? WHAT DOES THE MIX LABEL MENTION ? THANKS !

    • Hi Toni, sorry for the confusion. The shrimp in the ingredient photo is actually raw. To make the dip, cook the shrimp until it is no longer raw...about 2-3 minutes. The herb mix is a combination of garlic, onion, salt, pepper, parsley, sage, rosemary, and basil. I haven't used anything outside of the PC herb mix, but I'm sure another brand garlic and herb mix like the one Gail mentioned would work great!
