This crispy eggplant/brinjal fry is one of the easiest as well as tastiest recipes that you can ever make with this vegetable. In fact, it is a lovely fried veggie dish that you can make whenever you wish to. These brinjal slices have nice sweetish tones and a soft texture from within and crisp from outside. A lot of you may not have a soft corner for the humble vegetable brinjal/eggplant. But to me, this veggie is quite a star. I make this Brinjal Fry using less spice powders and coating the brinjal slices with semolina flour or rice flour. You can even use chickpea flour or gram flour (besan) or cornstarch or all-purpose flour.

I often make veggie fries as a side dish to go with our meals. The vegetables are sliced, marinated with spices and then coated with rice flour, gram flour or semolina. Later, pan-fried or shallow-fried in oil.


So basically in this recipe the eggplant/brinjals are thickly sliced and marinated in a mixture of red chili powder, turmeric powder, rice flour and salt. Then, each slice is carefully, pan-fried to a perfect crispy golden colour.

Eggplant has a bland taste, it soaks up flavours from other ingredients like a pro. Also, the spongy and firm raw texture becomes deliciously melt-in-mouth when smoked, fried or even braised. Since brinjal absorbs a lot of oil, I pan-fry it and use less oil while frying. Other such vegetable can even be baked or air fried too.

One of my favorite recipes with minimal ingredients. This is a vegan preparation of tasty, crispy pan fried eggplant slices. Try it, you’ll like it too. This Brinjal Fry or Fried Eggplant is best accompaniment with dal-chawal (lentil-rice) combination or khichdi.

Ingredients

  • 1 brinjal / eggplant, thickly sliced
  • 1/2;tbsp kashmiri red chilli powder
  • 1/2 tsp turmeric / haldi
  • 3 tbsp rice flour
  • 1/2 tsp salt
  • 2 tbsp water
  • Oil for frying
Instructions

Firstly, in a large mixing bowl take chilli powder, turmeric powder, 2 tbsp rice flour and salt.
Combine well making sure the spices are mixed.
Now add 2 tbsp water and prepare a masala paste.
Add in thickly slices brinjal and coat with masala paste.
Coat well and shallow fry or pan fry in hot oil.
Fry on low flame making sure to cook well.
Now flip over and cook brinjal on both the sides. do not over cook as then brinjal will loose shape.
Fnally, serve crispy brinjal fry as a side dish.
Tips
  • Firstly, make sure to slice brinjal uniformly, else they take different time to cook.
  • For a spicier Brinjal Fry, add more red chilli powder.
  • Additionally, add corn flour helps to get crispy brinjal fry.
  • To bring some variation, you can add a bit of ginger and garlic paste while marinating the brinjals.
  • Also fry on low flame, else brinjal will not get cooked from inside.
  • For a healthier option, choose to grill/bake or air-fry the brinjal.
  • Finally, brinjal fry taste great when served hot.
