With everything going on at the moment, there’s even more reason to be eating chocolate through January. These super easy brandy truffles can be kept in the fridge for 1-2 weeks, and perfect as an after dinner treat. This is adapted from a Sainsburys Magazine recipe, but with the addition of some brandy - it is January after all.
Of course, feel free to leave out the brandy if you would rather, or try mixing it up with another liquor. Also, try and choose quite a good quality chocolate - since they are pretty dense chocolate wise, the nicer the chocolate, the nicer the overall truffles will be!

Ingredients
- 1 1/2 Cup Dark Chocolate, chopped (200g)
- 2/3 cup Double Cream (150ml)
- 2 TBSP Butter (30g)
- 1 TSP Sugar
- Pinch of Sea Salt
- 2 TBSP Brandy
- Cocoa Powder (for rolling)
Instructions
- Put the peices of dark chocolate in heat proof bowl. Add the butter, sugar and cream to a non-stick pan and heat gently, stirring gently and not letting it boil.
- Pour the cream over the chocolates and stir until it has melted. Stir in the brandy. Pour into a shallow bowl and put in the fridge until set. (2-3 hours)
- Using a teaspoon, take a scoop of the set mixture and roll with your hands into a ball, then roll in the cocoa powder and place on a plate. Repeat with the rest of the mixture. Store in a airtight container in the fridge, and eat within 1-2 weeks!

These are so easy! I left out the brandy tho, I'm not a drinker at all. BUT I was VERY tempted to claim that they did in fact contain the alcohol so I wouldnt have to share🤣
What is double cream?
