Tuna Salad Lettuce Wraps
It is the hot days of Summer here in Michigan. So easy lunches are on the menu at our house. I am trying to cut down on carbs and this is a great way for me to skip the bread for a sandwich.
I drain my tuna first otherwise it seems to get way too soggy for me even in a lettuce wrap. I add in any vegetables I either have or want in the tuna salad. I really like some crunch in my tuna salad. I added some green onions and some radishes. Then I mixed up the dressing I used some mayonnaise and a little bit of mustard. I then added everything together and put it in the refrigerator for an hour to let everything marry together. To serve I just use the Little Gems Lettuce. I scoop some on each wedge and serve.
All ready to serve.
Draining my tuna.
Chopped green onion.
Chopping the radishes.
Mixing the dressing.
My lettuce cups.
So good.
