Last weekend, I was invited to a small potluck party with my close friends and family. As always, I wanted to bring something special to the table — something homemade, comforting, and a little bit indulgent. After thinking for a while, I decided to make Dahi Paneer Kababs. These soft, creamy kababs with a hint of spice are always a hit and perfect for sharing.


What I love most about Dahi Paneer Kababs is their delicate texture and rich flavor. They are not too heavy, yet feel luxurious when you bite into them. The softness of paneer combined with the creaminess of hung curd creates a melt-in-the-mouth experience, while the gentle spices make them flavorful without being overwhelming. Since it was a potluck, I wanted to ensure the dish would suit everyone’s taste — both adults and kids — and these kababs fit perfectly.

I started the preparation early in the morning to give myself enough time. First, I made sure to prepare the hung curd well in advance. I took thick curd, placed it in a muslin cloth, and let it hang for a couple of hours to drain out all the excess whey. This step is very important because any extra moisture can make the kabab mixture loose and difficult to shape.


While the curd was getting ready, I grated fresh paneer. I always prefer using homemade or fresh store-bought paneer because it gives a softer, fresher taste to the kababs. For binding, instead of using potatoes or excessive bread crumbs, I decided to use dry roasted besan (gram flour) and a bit of grated cheese. Dry roasting the besan not only removes the raw smell but also adds a slightly nutty aroma, which pairs beautifully with the creaminess of the paneer and curd. The cheese, on the other hand, works as a wonderful binder and adds a silky richness to the kababs.

Once the hung curd was ready, I combined it with the grated paneer, roasted besan, grated cheese, chopped green chilies, freshly grated ginger, and a generous handful of finely chopped coriander leaves. I skipped adding mint leaves and lemon juice this time because I wanted the pure flavors of paneer and curd to shine through. For spices, I added roasted cumin powder, chaat masala, garam masala, and just enough salt to balance the flavors. The mixture came together beautifully — soft but firm enough to hold shape.


I gently shaped them into small round patties, making sure each one was even in size for uniform cooking. To give them a slight crunch on the outside, I lightly rolled them in bread crumbs. Once all the kababs were ready, I placed them in the refrigerator for a short time. This little resting period helps them firm up and prevents breaking while frying.

Closer to the party time, I heated oil in a non-stick pan and started shallow frying the kababs in batches. As they sizzled on the pan, the kitchen was filled with a lovely aroma of spices and roasted gram flour. Each kabab turned a perfect golden brown, with a crisp outer layer and soft, creamy inside.


When I finally arrived at the potluck, I served the warm Dahi Paneer Kababs with a side of green chutney and a simple yogurt dip. Everyone at the party absolutely loved them. The kids enjoyed their mild taste and soft texture, while the adults appreciated the well-balanced flavors and the hint of nuttiness from the besan. A few of my friends even asked for the recipe, and I was more than happy to share.

Preparing Dahi Paneer Kababs for the potluck turned out to be a wonderful choice. It reminded me once again how simple ingredients, when thoughtfully combined, can create something truly delightful. This recipe will definitely remain one of my go-to options for future gatherings.

Ingredients

  • Paneer – 200 grams (grated)
  • Hung curd – ½ cup (thick and creamy)
  • Dry roasted besan – 2 to 3 tablespoons
  • Cheese (processed or mozzarella) – 2 tablespoons (grated)
  • Ginger – 1 teaspoon (grated)
  • Green chili – 1-2 (finely chopped, adjust as per taste)
  • Coriander leaves – 2 tablespoons (finely chopped)
  • Roasted cumin powder – 1 teaspoon
  • Chaat masala – ½ teaspoon
  • Garam masala – ½ teaspoon
  • Salt – to taste
  • Oil – for shallow frying
  • Bread crumbs – for coating (optional)
Instructions
Prepare Mixture
In a mixing bowl, combine grated paneer, hung curd, grated cheese, roasted besan, ginger, green chili, coriander, cumin powder, chaat masala, garam masala, and salt.
Mix well until smooth and soft dough forms.
If too soft, add a bit more roasted besan.
Shape the Kababs
Grease hands lightly with oil.
Take portions of the mixture and shape into small round or oval kababs.
Coating
Roll gently in bread crumbs for extra crispness.
Shallow Fry
Heat oil on medium flame.
Fry kababs till golden brown and crisp on both sides.
Serve
Serve hot with green chutney or yogurt dip.
Tips
  • Use thick hung curd to avoid a watery mixture.
  • Dry roast besan well to enhance flavour and improve binding.
  • Grate paneer finely for a smoother texture.
  • Chill the shaped kababs for 15–20 minutes before frying to help them hold shape.
  • Shallow fry on medium heat for even browning and a crispy exterior.
  • Since there’s no mint or lemon, this version will be rich, mildly spiced, and creamy. If you want a very slight tang, you can optionally add ¼ tsp amchur powder (dry mango powder)
  • For Kid’s, skip green chilies or use very finely chopped mild ones and add a little grated carrot or boiled sweet corn for natural sweetness.
  • For Airfryer, preheat air fryer to 180°C (350°F) for 3–5 minutes. Brush kababs lightly with oil on both sides. Air fry in batches for 10–12 minutes, flipping halfway. Do not overcrowd the basket — leave space for even cooking.
