It's very healthy kootu which is made only with all sorts of vegetables. It is served as a main dish in South Indian weddings too.

The main ingredient apart from the vegetables is the turdal or Yellow lintils which is a good protein rich addition to this recipe.

Come let's get into the process of making this tasty recipe 😀

Pressure cook all sort of vegetables like, white pumpkin, raw banana, carrot, sweet potato, beans etc.

Alongwith the vegetables, pressure cook tur dal in a pan.

Allow it for 4 whistles.

Soak 25gms of tamarind and extract pulp and keep it aside.

In a pan roast chanadal, coriander seeds, methi seeds, red chilli and coconut.

Add water and make it a paste and keep it aside.

In a kadai, add tadka like oil, mustard seeds, asafoetida and curry leaves.

Add the boiled vegetables and tamarind pulp. Let it boil for some time. Add required salt.

Add the coconut paste.

Add the cooked tur dal.

Let it boil.

Tasty tasty vegetable kootu is ready to be served with hot rice.

Ingredients
Ingredients for this vegetable kootu
  • Mixed vegetable 500gms
  • Cooked tur dal 100gms
  • Tamarind one big lemon size
  • Coconut 🥥 one half
  • Turmeric powder one teaspoon
  • Oil 2 teaspoon
  • Mustard seeds one teaspoon
  • Curry leaves one string
  • Chana dal two tablespoons
  • Coriander seeds 2 tablespoons
  • Methi seeds one teaspoon
  • Asafoetida one pinch
  • Red chili 🌶️ 5 to 6 nos
Instructions
Process of making vegetable kootu
Pressure cook all the vegetables and tur dal with one teaspoon turmeric powder and keep it aside.
Soak tamarind water and remove the pulp and keep it aside.
In a pan, dry roast, chana dal, coriander seeds, methi seeds,red chillis till it turns into golden brown.
Add this mixture into a mixie jar with coconut. Add some water and make it a paste. Keep it aside.
Heat a big size kadai.
Add one teaspoon of oil
Add one teaspoon of mustard seeds
Let it spluttter.
Add a pinch of asafoetida
Add coriander leaves.
Now add the boiled vegetables.
Add the tamarind pulp.
Add two spoons of salt.
Let it boil for 10 minutes till the raw smell of the tamarind goes off.
Now add the coconut paste.
Let it boil for 5 minutes.
Now add the cooked tur dal.
Let it boil for another 5 minutes.
Tadaa 🎉 🎉 🎉 tasty tasty vegetable kootu is ready to be served.
Serve it with hot rice with a spoon of desi ghee and enjoy.
Tips
  • Soak the tamarind into water previous night to save time in the morning.
